Spetzle soup (Steba DD2)

Ingredients

Any broth (preferably chicken) in my case, broth after cooking pork shank.
Spetzli
Flour 300g
Milk (water can be used) 75ml
Egg 3 pcs
Salt 3/4 tsp

Cooking method

  • Mix the flour and salt in a separate bowl, add milk and scrambled eggs to the flour, mix with a wooden spoon and beat until the dough acquires a glossy surface (all this can be done in a food processor)
  • Cover the dough and leave at room temperature for 30 minutes
  • I boiled the knuckle, it turned out to be such a wonderful broth that my husband simply did not let me pour it out, it was decided to cook some kind of simple soup, it's easier to shpetzli (or dumplings) or nothing.
  • Cooking Stebiane 2, with the lid open, on the Soup mode.
  • Bring the broth to a boil and introduce the spezli into the boiling broth, this time I made them with a special press, for making homemade noodles, but they can be made with a knife and a wooden board, special "graters", and you can also use a colander or a press for potatoes.

Note

Spetzli, dumplings are very tasty, I often add grated cheese to the dough. Can be used as a side dish, for baking or as an independent dish with sauces.

Cooking method for side dish.
Boil water, salt.
Sprinkle water on a cutting board, put the dough on it and cut the dough into thin long strips with a sharp long knife.
Cook in batches, catch the first with a slotted spoon and proceed to the next, boil each batch for 3-5 minutes
There are special devices for making spezli, I do it with my "grater" or a press, it is not convenient for me on the board. You can also do it through a colander or potato press.
