ham or bacon 100 g

  • This not at all complicated and not very original dish is very common in Austria. Such a legend is associated with its origin. The emperor of the two-pronged Austro-Hungarian Empire, Franz Joseph 1, hunted in the Styrian mountains. He was a man of simple and strict morals, he did not like excesses, neither did he like huge retinues. It so happened that he fought off the retinue that he had in pursuit of sulfur. He did not catch up with the chamois, but he got lost pretty much. Towards evening he drove out to the estate of one of the local barons. It was really difficult to call it an estate. The Baron was an old soldier, and as often happens, not a very successful business executive. While he once again fought, the estate fell into disrepair, the manager fled along with all the taxes collected, and so on. Local peasants, too, are not rich, so the baron had nothing to take from them either. And then a guest is on the threshold. And what kind. The emperor himself. What do you command a loyal subject to do? I don't want to hit my face in the dirt, I have to treat. Well, at least the emperor has no retinue. The Baron sent a servant in search of provisions. Unfortunately, the servant returned with a skinny chicken. Well, how to treat such an emperor? Fortunately, the servant was dodgy. From the skinny chicken he took only the breast, beat it off, wrapped the leftover ham and cheese in the meat and baked it in a mixture of beer and cream. In this form, the meat became soft, and the hungry emperor appreciated the culinary talent of the owners. How true this story is and how it ended in real life - the story is silent. Well, the dish in different variations can still be found in restaurants in Austria.
  • 1. So, divide the chicken breast into two pieces, flatten and beat off.

  • 2. Season with salt and pepper and put ham and cheese pieces in the center of the chop.
