Ingredients

Beef broth 3.5 l
Cabbage 100 g
Beet 1 PC
Onion 1 PC
Carrot 1 PC
Bulgarian pepper 1 PC
Garlic 3-4 cloves
A tomato 1 piece
Tomato paste 1 tbsp. l.
Canned white beans 1 can
Vinegar 1 tbsp. l.
Sugar 0.5 tbsp. l.
Potatoes 1-2 pieces

Cooking method

  • From the moment the first cartoon appeared, I started looking for my perfect borscht. Like everyone else, I wanted something simpler: I threw everything down, closed the lid, pressed the button and that's it! But alas, there are no miracles. For me, borscht is not only a soup with beets and cabbage, but always a pine forest with a characteristic rich taste. And of course, this simply cannot be achieved in one stage. Therefore, I decided to share my "signature" recipe.
  • It makes the process easier for me that I have 2 pressure cookers with three bowls at once (thanks to Ozone for giving me a Teflon bowl for the stem). I put broth to cook, in Shtebe this is a program SOUP, in Oursson - To cook... While the broth is being cooked in Orsyusha, I begin to prepare vegetables: I cut and chop everything, pour potatoes with cold water.
  • I fry in a frying pan. Pass the onions and carrots on a vegetable mole. Then I add the grated beets and squeeze out the garlic. I fry for another minute and pour in 1 tablespoon of vinegar and a little, literally half a tablespoon of sugar. Then the tomato paste and some water or broth are sent there to dilute the paste. And at the end I add the Bulgarian pepper and tomato cut into strips. I leave it all to simmer over low heat.
  • At this time, while the vegetables are stewing, we send potatoes and cabbage into the bowl, fill everything with broth and put on the program VEGETABLES for 5 minutes. At the end of the program, add stewed vegetables, a can of canned beans (you could have added dry beans while cooking the broth, you do not need to soak it, it will cook well), disassembled meat, salt and season with any spices to taste. Let stand on heating for 5-10 minutes, so that all the ingredients are "married". Serve with sour cream and fresh herbs.
  • There are two more cooking options without using the stove.
  • Option 1 if there are already boiled or baked beets. Now the shops sell ready-made beets. It is good because the package contains beet juice, which gives the borscht color very well. In this case, the borscht will be cooked without vinegar and sugar. First on the program FRY sauté carrots and onions. Then add tomatoes, pepper, garlic, diluted tomato paste and simmer for about 5-7 minutes. Turn off the program, add cabbage, potatoes and fill with broth. Program VEGETABLES 5 minutes. And at the very last moment, add the finished grated beets and juice from it. Let stand on the HEATER for 5-10 minutes.
  • Option 2 if the beets are raw. We make frying on the program FRY then everything is like on a stove. As soon as the last ingredients have been added (cabbage and potatoes are also sent here), mix everything, close the lid and set the program VEGETABLES 5 minutes. At the end of the program, pour the broth and again the program VEGETABLES here 1-2 minutes is enough. All borschik is ready!

similarly, I cook soups broth for 25 minutes, then vegetables there for 5 minutes, then frying (stewing / microwave oven) in microwave oven I like to do more, it takes 4-5 minutes, faster than frying pans, but since frying itself is harmful, what's the difference if it's in harmful microwave will cook)))) another thing is extinguishing) the soups are delicious!

I once read about this method in the culinary newspaper, since then only this way. Grate and chop onions, carrots (for soup), put in a microwave bowl or a deep plate, a spoonful of vegetable oil, a little salt (so that vegetables give juice), black pepper, spices, if borscht or cabbage soup, then a spoonful of tomato paste. In the microwave for five minutes at the maximum, get it, stir, another three minutes in the microwave. The frying is ready))) I like softer vegetables, so look how it tastes better for you, I digest the vegetables a little, so if I cook 5 liters in a saucepan, then 8 + 5 is usually. In this way, I also carcass onions with carrots for stuffed peppers and cabbage rolls. I hammer the microwave pot two liters to the top, eight minutes, stir, eight more minutes. It is very convenient and you do not need to stand next to it, as with a frying pan.

Lerele, I do it a little differently, I mix the necessary vegetables for frying well with oil (not a spoon as yaKachka wrote, because in a frying pan there is also not a spoon if not stew, namely frying) and for 4-5 minutes at maximum power, everything is ready!

Soda on a Chinese grater with straws and fry a little with the rest of the vegetables. And then everything is according to the standard. I have never added beans to borscht, now I will try and put it!
