Fisch in Bierteig - fish in beer dough

Ingredients

Pollock fillet 500 g
Beer white 200 ml.
Wheat flour
Sour cream 2 tbsp. l.
Chicken egg 2 pcs.
Salt, pepper, sugar taste

Cooking method

  • Cut the pollock fillet into pieces, add salt with sour cream, leave in the refrigerator for at least 6 hours.
  • Prepare beer dough - beat beer with egg yolks, flour and salt until the mass becomes homogeneous.
  • Beat the egg whites until firm peaks, mix into the dough, salt, pepper and add a pinch of sugar.
  • Leave the dough to "rest" for 30 minutes.
  • Roll the pollock pieces first in flour (preferably in rye), then dip them into the dough and fry until golden brown.
  • The dough will definitely remain.
  • We fry pancakes from it and wrap the fish in batter in them.
