Cold beet soup

Ingredients

beet 400 g
bulb onions 2 pcs.
celery (petioles) 2 pcs.
sugar 2 tsp
vegetable oil 2 tbsp. l.
red wine vinegar 2 tbsp. l.
chicken bouillon 750 g
ice water (to dilute the soup) taste
sour cream, green onions taste

Cooking method

  • Instead of the classic botvinia, I decided to cook this very simple, but bright and aromatic soup. I cooked the soup in plain water, because I wanted to cook the lean version, but this did not make it less tasty. Try it - in such heat, refreshing beet soup is what you need.
  • Peel and finely chop the onion and celery. Peel and dice the beets.
  • Heat oil in a heavy-bottomed saucepan. Add onion and celery, sprinkle with sugar and cook, stirring occasionally, for 5 minutes. Add beets, vinegar and broth, bring to a boil. Cover and cook for 40 minutes. Season with salt and pepper. Grind the soup with a blender until smooth. Cool and put in the refrigerator for 6 hours (I chilled for 2 hours after it had completely cooled down on the stove).
  • Dilute the soup with ice water to the desired consistency. Serve with sour cream and green onions.
  • Try adding some freshly grated or creamy horseradish to the sour cream to make the soup taste brighter and more interesting.
