Ingredients

corn (cobs) 3-5 pcs
leek 2 pcs
small potatoes 2 pcs
vegetable broth 1.5 l
basil
olive oil
Ricotta cheese
salt pepper

Cooking method

  • Cut off the corn kernels, leave the cobs and use them to make a rich vegetable broth.
  • Sweet Corn Soup with Ricotta Cheese and Basil Oil
  • Prepare vegetable broth.
  • Add about 2 liters of cold water, peeled corn cobs, light green leeks, celery stalks, carrots, crushed garlic cloves, bay leaves, a few black peppercorns, a handful of parsley to the saucepan. Cook for 30 minutes, then strain and use in soup.
  • Sweet Corn Soup with Ricotta Cheese and Basil Oil
  • 1. In a saucepan (I used MV), melt the butter. Add chopped leeks, potatoes and corn kernels. Season with salt, add a little (just to cover vegetables) water and simmer over medium heat until vegetables are tender. Add vegetable broth and simmer all together for about 10 minutes.
  • 2. When the soup is ready, puree it with a blender.
  • 3. Chop the basil in a processor and mix with olive oil.
  • 4. Pour the soup into bowls. Add a spoonful of ricotta to each plate and drizzle with basil oil.
