How I love hodgepodge !!!!!! I always order it in restaurants in Russia, it's so delicious for me. And the husband does not eat, or rather eats, but under pressure, and you will not force and will not.
Therefore, I cook it once a year.
I cook according to the same recipe

And I - without potatoes and carrots. And no sausages - only at least 4 types of meat: one is smoked, the second is chicken, the third is beef, and the rest is what we have. Pickled cucumbers only; cut into strips and cook in a frying pan until soft, then pour it with water into a hodgepodge. There should be twice as much meat as onions, and twice as much onions as cucumbers. I cut the lemon into thin half rings along with the skin. But I don't cut olives - I like to catch them whole from the hodgepodge.
Yes, a hodgepodge is a thing. It’s a pity that it’s hot in summer ...

At home, we have not cooked soups in meat broths for a long time. Somehow I don't want to. But Solyanka is a separate topic. I tried it for the first time when I was traveling with my parents on the Kiev-Leningrad train in the summer of 1970. In a restaurant car. We were returning home from vacation. At the same time I tasted olive for the first time in my life. The impressions were unforgettable. Akin to an orgasm. At 9 years old)). Great thing !! At that time, it was possible to get mayonnaise only on holidays. Such was life, even in Leningrad. Therefore, I remembered the hodgepodge and fell in love for the rest of my life. The recipe is correct. There is nothing to add. Cook, you will not regret it))

yeah, it is almost dietary, only pickles are not a dietary product. I also don’t like turnips in soups, so I make it from leeks.

It is usually true - they do not put potatoes in a hodgepodge - this is, one might say, only a component for a society of potato lovers. Likewise with carrots ...
However, sometimes potatoes are simply irreplaceable here. Using salted olive marinade, or cucumber pickle, there is a chance to oversalt the dish. And, in this case, two or three peeled potatoes can be put into the pickle, which will take away excess salt. Taking them out of the finished dish later, or not taking them out, is the chef's personal business ...

Shl. The recipe is very correct (except for potatoes and carrots). Rarely where do you find a mention of the need to peel the skin from cucumbers, which is extremely necessary in this dish, otherwise this skin will grind on your teeth, because it always remains oak, no matter how hard you cook such a cucumber).
And the brine, before adding to the pan, must be boiled a little in a separate bowl, and then filtered: if pickled cucumbers are used, then the smell of vinegar, which is completely unnecessary here, will go away, and if fermented, then fermentation products will be killed ...
Still, it is better to put lemon slices rather than lemon juice. Lemon zest adds extra charm to the overall crazy hodgepodge aroma. However, the taste and color ...

Sorry, if that ... I went for capers, - for tomorrow my oglo-eaters again demand this villager ...
