Berry squares (blueberry-raspberry)

Ingredients

Wheat flour 3 tbsp.
Sugar 1.5 tbsp.
Butter 230 (210)
Egg 1 PC. (excluded)
Corn starch 4 tsp
Baking powder 1 tsp
Salt 1/4 teaspoon (excluded)
Blueberry (berry) 4 tbsp. (2-3 st.)
Zest and lemon juice (only for sweet berries) 1 lemon (1 tablespoon juice and 1 tablespoon zest)

Cooking method

  • - In a large bowl or food processor, mix 1 tbsp. sugar, flour and baking powder. Add zest and mix well.
  • - Put sl. butter in pieces and an egg (I excluded it without prejudice) and mix with a fork or a knife of a combine until a homogeneous crumb. (The main thing is not to knead in the combine, so that the dough does not turn out!)
  • Berry squares (blueberry-raspberry)
  • - Line the form with parchment and transfer a little more than half of the crumb to the bottom.
  • - Mix 0.5 tbsp. sugar, starch and 1 tbsp. l. lemon juice, add washed and dried blueberries (you can ice cream), mix gently and distribute evenly over the shape.
  • Berry squares (blueberry-raspberry)
  • - Place the remaining crumbs on top of the berries.
  • - Bake the cake for about 40-50 minutes at 180-190 g, until the crumbs are pleasant golden brown.

  • - Remove the cake from the pan with the paper, let it cool completely and cut into small portioned squares!

Note

The recipe is taken from the magazine "Grocery School". I simplified and lightened it as much as possible. The first time I used frozen blueberries, the second - fresh blueberries and raspberries.
If you want to make squares or a whole pie high, put an egg in the dough.
I liked the recipe so much that I hasten to share it before the berries are gone!
Now I make a double portion of the dough, I put half in the container in the freezer so that I can bake at any time.
Raspberry is very tasty! If not fresh, you can add a little bit to the berries with a teaspoon!

Just as planned, instead of berries, I used jam (mixed the remnants of blueberry and pear), but since the jam turned out to be too sweet, I had to drink it abundantly with tea (milk), I think it will be fresher with berries. The crust on top turned out to be crispy, it feels like there are nuts. In general, delicious, sweet, high in calories
