Homemade wine Strawberry

Ingredients

Strawberry 3 Kg
Sugar 2 Kg
Yeast for BIOWIN wine 3 GR
Yeast nutrient medium 3 g
Wine acidity regulator 3 g
Disinfection bottle (sachet) 7 g
Bottle 20 liters
Odor trap 1
Bottle cap 1
water 4 l

Cooking method

  • The main difficulty in making strawberry wine is getting the juice. Strawberries are very reluctant to give it away, so you can't do without adding water and sugar. Another important point - if for most fruit wines we did not wash the fruits so as not to wash off the natural yeast, then strawberries must be washed, otherwise an unpleasant earthy taste will appear in the wine.
  • 1. Mash ripe peeled strawberries with your hands or a wooden rolling pin

  • 2. Dissolve sugar in warm water.
  • 3. Prepare the bottle, pour out the package with the sterilizer and under running water 40-45 g, rinse well. let the bottle cool. This is necessary so that foreign microbes do not interfere with the fermentation of the berry.

  • 4. Place the resulting strawberry pulp in a glass bottle or jar, add sugar syrup. I also recommend tossing in a handful of raisins and stirring well. Raisins contain natural wine yeast that promotes fermentation. You can do without them, but then there is no guarantee that the strawberry slurry will ferment. Fill the container no more than ¾ of its volume, otherwise the wort may overflow during fermentation.
  • 5. Preparation of yeast.

  • Yeast for my wines, amenable to complex fermentation. Dissolve in warm water not higher than 27 grams. Let stand for 10-15 minutes.
  • 5. Combine everything in a bottle, strawberries, yeast, acidity regulator and sugar syrup.

  • 6. After 36-45 days, quiet fermentation will end (the water seal will stop bubbling, a sediment will appear at the bottom of the container, the wort will brighten). After that, young strawberry wine is drained from the lees through a thin tube and poured into bottles for storage. Care should be taken to ensure that each bottle is tightly capped.
  • 7. Move the bottles to a cellar with a temperature of 8-12 ° C for ripening. Before using, I advise you to age the homemade strawberry wine for at least 65 days, then its taste will noticeably improve.
  • As a result, you will get a wine with a strength of 16-18 degrees. If this is too much for you, then at the initial stage of cooking you should double the proportion of water, in our case from 4 to 7 liters. The result is a strawberry wine containing 10-12% alcohol, but its shelf life is shorter. Strong wine will definitely not spoil for a year and a half, light wine - 6-8 months.

Yulek,
I wonder if you can make frozen strawberries?
It's a pity to translate fresh wine into wine, especially in our north.

And is it possible to do without wine yeast?
Yulek
mur_myauYou know, my husband and I often make wine during the berry season and not only from strawberries. Frozen berry can be used, I have not tried it, but I have seen many recipes from not fresh berries. In the recipe, I indicated that you can do without yeast. But strawberries are difficult to ferment, and yeast helps her with this. So go for it!
