Marzipan cookies Parisian

Ingredients

Marzipan mass (min. 50% almonds) 500 g
Passion fruit puree or syrup (Monin) 50 g
Glucose 50 g
Fresh protein (half an egg) 15 g
Candied cherries

Cooking method

  • I love A lot of guests, a lot of food, laughter and pleasure. I baked a small cookie, petit four (in French), it should not be more than 10 grams. This recipe belongs to Alexander Seleznev.
  • I specifically measured it out on the most accurate scales. True, only one cookie, the rest tried to make copies. To be honest, it was not easy to work with the marzipan mass, it was hard to squeeze it out of a pastry bag. But then I found a way out, with a wooden dough trolley, I just moved it as close to the nozzle as possible. Here!
  • But in general (I tried one thing;) mmmm, delicious!;) The guests were delighted ...
  • Cut the marzipan mass into large cubes and mix with the protein.

  • Warm passion fruit puree with glucose on the stove to 45 degrees and pour into the marzipan mass with a thin string. We continue to beat until smooth.

  • Next, on a baking sheet covered with parchment paper, use a pastry bag (take a large nozzle) to form small pyramids. We cut the cherries into two parts and press each half into the cookie.

Now I know where to put the marzipan mass! Thank you!
Is it possible to cut the finished dough into slices like sausage? Or is it not thick enough?
Kvitka22
You cannot, the mass is not so thick. The bag will work best. Try it, they are really delicious.
