Ingredients

For ice cream
milk 1 st
cream 23% 1 st
egg yolks 6 pcs
granulated sugar 2/3 st
vanilla extract 1/2 tsp
dark rum 2st. l.
salt pinch
For dates
dates 12 pcs
rum ~ 30-50 ml
For nuts
maple syrup 1/3 st
pecans 1 / 2-2 / 3 st
glass 250 ml

Cooking method

  • For dates
  • Remove seeds from dates and cut into pieces. Add rum and bring to a boil in a small saucepan. Remove from heat, stir, cover and leave at room temperature for at least 2-3 hours (this can be done the day before).
  • For nuts
  • Heat the maple syrup in a small saucepan until it boils. Add coarsely chopped pecans and bring to a boil again. Remove from heat, stir and allow to cool completely.
  • For ice cream
  • Heat milk, sugar and salt in a saucepan.
  • Pour the cream into a large bowl and place the filter on top.
  • In a separate bowl, beat the egg yolks. Slowly pour the warm milk mixture into the egg yolks, whisking constantly. Then return the yolk mixture to the saucepan.
  • Over low heat, stirring constantly, heat the mixture until it slightly thickens and begins to envelop the spoon. Prevent the yolks from curdling.
  • Pour the finished mixture through a sieve into a saucepan with cream and stir. Add vanilla and rum (if desired, you can not add), and then stir until cooled completely in an ice bath.
  • Chill the mixture in the refrigerator additionally.
  • Freeze the mixture in an ice cream maker according to the manufacturer's instructions. For the last few minutes, add the prepared nuts and dates.

and I will also insert my 5 kopecks: rum (and any alcohol) must be poured at the very end, otherwise it will slow down the freezing. So in my manual for the ice cream maker it is written, I tested it, I confirm.

I have 2 glasses of cream and 1 glass of milk in my ice cream recipes (all the basic recipes are on 5 yolks).

Irin, this is a perfectly normal combination. There are a lot of dates and nuts and the ice cream turns out to be quite "plump". If you want and like even more fatty ice cream, you can take any recipe for your favorite vanilla ice cream as a basis.
