You know what, I will answer you in part, because in my case, after making the cake and freezing it for the first time, we ate it and the rolls were normally cut after an hour in the freezer. The leftovers only once had to be left to re-freeze, covered with the same film. The cake was not stone, the biscuit was easily cut off, of course not soft but not stone either. Something like that. It seems to me that if the rolls are well marinated with brandy, then there should be no brick effect!
