Mushroom borsch

Ingredients

Dried mushrooms handful
Beet 1 small (100 g)
White cabbage 2 leaves (100 g)
Carrot quarter root vegetable
Bulb onions half onion
Tomato paste 0.5 tbsp. l
Sugar 0.5 tbsp. l
Garlic 1-2 teeth
Any fat 1 tbsp. l
Greens, salt, pepper taste
Meat or chicken broth 1 l

Cooking method

  • Rinse the mushrooms, break them not too finely, pour over the broth, leave them wet for several hours (for example, overnight). Then put to cook.
  • In a frying pan, melt half the fat (I use the fat removed from the beef broth; or pour in any oil, heat), put the beets grated on a coarse grater, sprinkle with sugar. As soon as the beets begin to fry, add the tomato paste and then a little water to stew and not burn. Simultaneously, in another frying pan, fry the carrots and finely chopped onions, grated on a coarse grater, in the remaining fat.
  • The mushrooms will boil for several minutes (we will assume that they have been cooked until half cooked) - put chopped cabbage to them. It starts to boil - add stewed beets to the pan, and from another frying pan - sautéed carrots and onions. Cook for several minutes, until vegetables are soft; add chopped garlic and herbs, pepper and salt.
  • The main thing is not to let it boil for a second after adding the cabbage, but only to simmer over the lowest heat.
  • You should not stand this borscht for half an hour, like any other self-respecting borscht: the aroma of dry mushrooms is lost somewhere. Serve immediately with sour cream. Mine also love a bite of onions.

I read the recipe for a long time on RussionFood. To be honest, I doubted that it would be for borsch without a good piece of beef. But it turned out to be surprisingly so tasty that I cook it often now. Eliminating some ingredients from the base recipe like celery root and vinegar.

You can cook Mushroom borscht completely lean if you use pure water instead of broth, and vegetable oil instead of beef fat. Delicious too!
