Ingredients

Pulish
water 125 gram
flour, premium 125 gram
dry yeast pinch

corn flour 125 gram

bacon 100g
dry yeast 2.5 grams

Cooking method

  • Pulish.
  • Mix all ingredients and leave at room temperature for 12-16 hours.
  • Dough.
  • Mix in cornmeal, yeast, water and leave for 15 minutes.
  • Fry the bacon and leave to cool on a napkin.
  • Add the rest of the ingredients, except for salt, bacon and knead for 5-8 minutes. Add salt and knead for another 3 minutes. I also added a couple of tablespoons of water to the dough to make it soft.

  • Fold the dough in an envelope into a greased container for 1.5 hours. During this time, stretch-fold once after 45 minutes.

  • Knead the dough into a layer and put pieces of bacon on it

  • We bake on a stone in an oven preheated to 240-250 degrees, the first 10 minutes with steam. Then we remove the steam, ventilate the oven, lower the temperature to 180-190 degrees and bake until tender. My total baking time was 35 minutes. Cool on a wire rack, cut and enjoy!
