Ingredients

Minced pork 500g
Tinder fungus sulfur-yellow 500g

Cooking method

Now is the season of these woody mushrooms. They are very tender and juicy. I have heard that they are made from them for a long time, but I have never tried it. Last year there was an attempt, even brought home a cut piece, but never cooked it. This year I brought the matter to the end. The taste of the HOA was not felt at all. It seems to me that in cutlets the HOA serves as a filler and, like soybeans, acquires the taste and smell of the one where it was added.

This conditionally edible mushroom has some peculiarities in its use: only young sulfur-yellow tinder fungus grown on the trunks of deciduous trees can be used for food. If these rules are not followed, then the use of this mushroom can result in hallucinations and poisoning.

This representative of the Polyporovye family belongs to wood-destroying mushrooms. The sulfur-yellow polypore prefers to be located on live or dead trunks of willow, oak, linden, poplar, birch and alder. In Russian and Ukrainian forests, this fungus begins to develop from mid-May and continues until the end of autumn. The most active growth of tinder fungus occurs in the first third of summer.

Usually, the shoots of sulfur-yellow tinder fungus are located on the trunks not high above the ground. At the first stage of development, the mushroom resembles a certain fleshy mass of a drop-shaped shape, painted in a yellowish color. Seeing this plant on a tree, you might think that dough is showing through the cracks in the bark of the trunk. After a while, the body of the tinder fungus becomes hard and resembles an "ear" in shape. The fungus consists of several accrete fan-shaped pseudo-caps, which are usually located on a single base (sometimes on individual legs). The hats can reach sizes from 10 to 40 cm, and the weight of the whole mushroom is up to 10 kg. The wavy edges of the sulfur-yellow tinder fungus are divided into blades with the help of deepened cracks. On the fruiting body of the fungus, there is a thin cream-colored fluff. This type of tinder fungus has an orange-yellow surface of the cap, which slightly tints with pink, and then changes its color to a color similar to that of light skin.

The flesh of this mushroom can be described as soft, juicy and quite brittle. Its color is white and the taste is sour. Tinder fungus has a faint smell - at first it resembles a lemon, and then an unpleasant mouse smell. On the surface of young mushrooms, liquid is abundantly secreted - yellowish watery drops.

Tinder fungus is a conditionally edible mushroom of the fourth category. You can eat strictly young mushrooms, which are characterized by a noticeable pleasant sour taste. Mushrooms are boiled for an average of 30-45 minutes or fried. The pulp of the sulfur-yellow tinder fungus - elastic and tender - is used in salads fried, salted or pickled. Minced meat is made from mushrooms, which can be used as a hearty and appetizing filling for pies.Minced meat is prepared from the more dry pulp for an egg casserole. This mushroom is also suitable for hot snacks: tinder fungus stewed in sour cream, tomato sauce or mayonnaise. One of the culinary benefits of this mushroom is that it can be stored in the freezer for quite a long time.

The sulfur-yellow polypore has several nicknames - "wood chicken" or "mushroom chicken". In vegetarian cuisine, it is used as a substitute for chicken meat. But in Germany and some regions of North America, delicious dishes are prepared from this type of tinder fungus.

Composition and useful properties

Japanese fungal therapists claim that tinder fungus is able to act on the liver in such a way that it will produce an enzyme that breaks down fats. For this reason, weight loss drugs based on this mushroom are produced in Japan.
Harm and contraindications

According to some sources, this mushroom is poisonous and can cause lip swelling, vomiting, allergic reactions, nausea, dizziness, and mild laxative effects. The sulfur-yellow tinder fungus is especially dangerous for children: in them the fungus can cause visual hallucinations.

Therefore, it is important to eat tinder fungus in limited quantities, being careful. A large amount of mushroom eaten can cause serious poisoning. The most toxic mushrooms are those that grow on conifers, as well as old ones that begin to decompose. It is important to collect young, odorless tinder fungi growing on deciduous trees.
