Ingredients

Salad shrimps (peeled) 400 g
Salmon 400 g
Tilapia 400 g
Olives 60 g
Salt 13-15 g
Sugar 1 tsp
Lemon juice 1 tbsp. the spoon
Dried greens (dill, parsley) 0.5 tsp
Gelatin 15 g
Pepper mixture (I have 4 types) pinch

Cooking method

  • You will probably scold me for the high cost of the recipe, but believe me, the result will reward a hundredfold for all the time and money spent!
  • I just couldn't help but share this yummy with you!
  • The recipe is taken from the video for the Redmond ham maker. I just adjusted the number of ingredients to suit Teskiy.
  • Defrost shrimp and tilapia and squeeze lightly. From 400g of frozen shrimp and tilapia, the result is 315g and 365g, respectively.
  • Cut the salmon into slices of about 3x3 cm. Pass the tilapia through a meat grinder with a fine grid or grind in a blender bowl until "porridge".
  • Place all ingredients in a large bowl.

  • and mix thoroughly by hand. A mixer is not needed here, otherwise the salmon will simply fall apart into small pieces.
  • We shift the minced meat into a flask of ham, tamping it with a spoon or spatula.

  • Now we close the lid, press the red pimp on top several times and put it either in the refrigerator, or like me, leave it on the table (but not overnight, of course).

  • I do not let it stand for a long time, I stand it for about an hour and set it to cook.
  • We take a saucepan with a height of about 14-15 cm. Place the ham maker in it and pour cold water so that it does not reach the pink edge by about 1 cm.

  • We bring the water to a temperature of 75C and time it. My roll was cooked at a temperature of 75-76C for 1 hour 50 minutes.

  • I didn’t want to dry it with a high temperature, so I decided that it’s better to simmer for a longer time at a low temperature, but the juice will be preserved.
  • At the end of the cooking time, we put our ham to cool in cold water. There should be as much water as it was during cooking so that it does not get inside the ham. After 30-40 minutes, remove the ham from the water, turn it over and drain the excess juice formed inside through the holes in the lid. That's it, you can put the ham in the refrigerator for a few hours until the roll is completely cooled.
  • Advice: if suddenly your roll gets stuck inside the flask, then do not pull too much, there is simply a vacuum created. With the sharp end of the thermometer, sand it lightly between the meat and the wall, it will quietly chomp and you can slowly pull it out. The flask remains generally clean, nothing stuck, only greasy and that's it.

The only thing I got wrong was that I put less gelatin than was needed, although this is not the first time I have been preparing such a roll. However, that time I spoiled it by adding 200 g of cod fillet. And all the noble taste has sunk into oblivion. It turned out the most, that neither is the usual fish nonsense. It's just that I don't really like fish, so I try to cook it either very tasty, or not at all!

Note

I do not advise replacing salmon with pink salmon, better with trout. Tilapia ... I don't even know, maybe for sea bass ... But just not for cod and the like! Why spoil such an excellent taste!
