Ingredients

grated carrots 1.5 mstk
sour cream 3/4 mstk
eggs 3 pcs
flour 1.5-2 mstk
sugar 1 mstk
orange juice and zest 40-50ml
starch 1 tbsp. l.
tomato paste 1 tbsp. l.
baking powder 2 tsp

sugar 1/3 mstk
flour 4 tbsp. l.
baking powder 1 tsp

for cream:
sour cream 200g
sugar 3 tbsp. l.
gelatin 2 tsp (10g)
orange juice and zest 50ml

Cooking method

  • A very summer and cheerful cake, tasty, healthy and not at all "heavy" for the body. Grate the carrots (tightly packed 1.5 mstk is about 200-250g). The main (carrot) layer of the cake is prepared like a biscuit: beat the proteins with starch with a mixer in a separate bowl, everything else in another bowl, carefully add the proteins. Cooking the middle layer: in a blender, break the prunes (raisins), sugar, sour cream, flour with baking powder, and eggs in a blender. Put half of the base layer into a non-stick bowl, then the middle layer, on it the remaining half of the "carrot" layer. We set the mode "Porridge" 0.3 1h39min (in other cartoons - "Baking"). While baking, prepare the cream. Pour 50 ml of orange juice into gelatin, leave to swell for 30-40 minutes. Beat well sour cream at least 20% (I have my own, you can cut it with a knife, if purchased, it may be watery, then you need less juice) with sugar and zest. We heat the present gelatin until it dissolves (this is about 70-80 * C), cool to 40 * C and pour it into the sour cream in a thin stream, whisking continuously. We put to freeze in the refrigerator. We are waiting for the cake to cool completely and decorate with sour cream. It didn't work out very nicely for me, but still, the cake looked very cheerful. I did it for so long, but they dared to do it in 5 minutes. It is not too sweet, slightly sour and very aromatic.

Ludmila, of course you can! It is baked like a regular biscuit (200 * С for 40 minutes). Check the "torch" for readiness and do not take it out for another 10-15 minutes (so as not to sink). It turned out to be very fragrant and not cloying at all.
