You can remove the stirrer before proofing so that the dough that has come up does not knock down. Or completely turn off the program after kneading, and after proofing, turn on Baking, if your bread machine has such a mode separately.

If you added 3 hours, then it works like a timer, the stove just waits for 3 hours, and then the program you have chosen starts, so the stove began to knead. It was necessary to press and hold the start / stop button for a few seconds, then select the "baking" mode in the menu for the desired time.
