Ingredients

Lean pork 500gr.
Fettuccine type noodles 300gr.
Shiitake or champignons 150-200 gr.
Bean sprouts 250 gr.
chicken broth 200-250 ml.

Cooking method

  • First you need to boil the noodles. It is desirable, of course, homemade. In the ingredients, I indicated the amount of dry, store-bought noodles. It will be homemade for 2-3 eggs, depending on their size. Throw the finished noodles in a colander and sprinkle lightly with the rast. butter, mix.
  • It is better to take a scapula from pork, it is not as fat as the neck, but also not dry, like a ham. Cool, in short!
  • So, cut the meat into thin slices 3-4 mm, the size of a matchbox or slightly smaller:

  • Put it in a bowl and cover with starch, mix thoroughly and add soy sauce. Mix everything well and put it aside.

  • Rinse the shiitake, shake off and chop coarsely.

  • Heat the wok by adding 2 tbsp. spoons rast. oil and 1 teaspoon of sesame seeds. When the wok is well warmed up, throw mushrooms into it. Fry until golden brown, stirring all the time.

  • When the mushrooms are ready, put them on a plate and add some more rast to the wok. butter and send meat there. Stir continuously, separating the pieces from each other. The meat is fried very quickly, so you cannot leave the wok. Fry until golden brown.

Shiitake is completely optional. There are no mushrooms in the original. I used to cook like that until I added shiitake. Nowhere without them! If you really want with mushrooms, try with mushrooms. When they are fried, they will absorb delicious oil and will also turn out very healthy.

Otherwise, when frying, they will emit a lot of water (they are fresh, they are completely dry and are fried immediately). Well, get ready, of course, for the fact that they will still have a pickled flavor. I'm not saying that this is bad, it will just be different - not as fresh. But I think that it should still be tasty. In general, for the future, if you haven't found a shiitake, and you don't want champignons, feel free to take oyster mushrooms. They, unlike the almost tasteless champignons, are simply awesomely delicious fried in a wok. And perfect for Chinese food. The same, however, as well as little black mushrooms. I use oyster mushrooms quite often when frying vegetables, and there is no such variety of vegetables available as in the recipe.
But I'm very interested in what you have for Chinese noodles? Is it wheat?
