granulated sugar 1 tbsp. l

Cooking method

  • Spring comes very quickly, already here and there the mother and stepmother are blooming, and there already dandelions will bloom. And since the age of their flowering is very short, it is necessary to have time to collect the buds that have not yet opened and make capers from them. Such capers can be added to the second courses of rice, potatoes, vinaigrette, hodgepodge, salad, serve as an independent snack.
  • What do you need
  • We collect dense buds that have not yet begun to bloom. We wash and clean the skirts (I left the skirts).
  • Blanch the prepared buds in boiling water for 2 minutes, and cool them under running cold water.
  • Put the buds tightly in dry jars, leaving about 1 cm from the top of the jar.
  • Marinade
  • Dissolve sugar, salt in 1 liter of water, add spices and boil for 2 minutes.
  • Cool slightly and add vinegar.
  • For the strength of the buds, you can add horseradish leaves, for the aroma - cherry or black currant leaves
  • Pour the buds with the ready marinade, cover the jars with lids and sterilize for 5 minutes.
  • Then screw the caps tightly.

Dandelions are edible from root to flower. The greens of the plant are rich in ascorbic acid, protein, fat and carbohydrates, they contain iron and phosphorus. From flowers I cook dandelion "honey" and make a tincture.
Honey is a great treat.
And the tincture is an excellent remedy for insect bites. It is done like this: I stuff a mayonnaise jar with flowers, fill it with vodka, close it with a lid and put it on the windowsill. After a week, the tincture is ready, I put it in a dark place.
If necessary, I take out a flower and wipe the bites directly with it. And then they do not itch! Especially true for those who have little kids.
