Ingredients

cashews 200 g
almond 30-35 gr
dates 6-7 pcs
Red currants handful
coconut milk optional
honey taste

Cooking method

  • Soak uncooked cashews in water for several hours, or overnight.
  • Remove seeds from dates.
  • Prepare the base: mix almonds and dates in a blender until a plastic mass is formed.
  • Line a form with high sides with cling film. Spread and tamp the nut-date mixture over the bottom of the mold.
  • Soaked cashews along with honey (honey gives sweetness, the amount is regulated to your taste, you can not add) grind in a blender until smooth. In the process of grinding, you will get a homogeneous dense cream in consistency (and even in taste) close to curd. If the blender does not work well, add water or coconut milk. The more homogeneous the mass is, the more it will look like cheesecake.
  • Put two-thirds of the resulting cream on a nut-date base.
  • Add the previously thawed currants to the remaining one-third of the cream and whisk everything together again in a blender until smooth.
  • Spread the resulting mass over the first white layer.
  • Place the dessert in the freezer.
  • Half an hour before serving, remove the dessert from the freezer, remove from the mold, remove the cling film and smooth out the irregularities with a spatula or knife soaked in hot water.
  • The dessert is well cut, it tastes like curd cream.
  • I made it in a 12x12 cm mold, you can also use separate small molds.
