Ingredients

Poolish
wheat flour 110g
water 110g
fresh yeast 1g

milk 113g
Main dough

Cooking method

  • Poolish
  • Mix all ingredients for pulish until smooth and leave at room temperature for 2 hours. Then transfer to the refrigerator (at + 4C) for 10-12 hours.
  • Welding
  • Mix the milk with flour in a saucepan and slowly heat with constant stirring., Until the mass thickens (until the state of heavy cream)

  • Main dough
  • Combine all ingredients in the bowl of the food processor. Mix within 2 minutes. And leave to rest for 15 minutes.
  • Then knead at 1 speed for 2 minutes, and then at a speed of 2 -4 minutes. The dough, after kneading, should look smooth and elastic.
