Cooking method

The pancakes baked according to this recipe are very, very thin, elastic and tasty. They are convenient for making various stuffed pancakes: knots, bags, envelopes.

To make pancakes without small holes, you need to prepare the dough without using a mixer.
To make the dough, combine flour, starch, salt and sugar. Add eggs to the dry mixture, stir. Pour in the warm milk gradually, stirring constantly. Sugar can be added to the dough to taste.
Knead the dough thoroughly to remove any lumps. If you are unable to get rid of them completely, strain the mixture through a sieve.
Add vegetable or melted butter. Stir everything well again. As a result, you should have a fairly thin dough. Let it steep for 30 minutes. This will allow the flour gluten to swell and your pancakes will be more elastic and will not tear when baking. Before baking each pancake, it is advisable to shake the dough, since it is with starch and quickly exfoliates.
Lubricate the skillet with oil only for the first pancake. All the rest are in a dry frying pan.
Baked from half the norm of products - 15 thinnest and most delicate pancakes turned out. Served with her favorite orange syrup.
