Ingredients

For stage 1:
Pork brisket 400 g
Pork seasoning 1/2 tsp
Fine salt 1/2 tsp
Vegetable oil 1 tbsp. l.
Water 3 tbsp. l.
For stage 2:
White cabbage 1.5KG
Salt 1 tsp
For stage 3:
Hot ketchup 2 tbsp. l.
(optional)
Fine salt 1 tsp
Hmeli-suneli 2 tsp
Bay leaf 2 pcs.
Vegetable oil taste

Cooking method

  • Cabbage cooked in a pressure cooker on the "Stew" mode bears little resemblance to the one that we are used to cooking in the oven. A lot of liquid is released from it, which does not evaporate anywhere. The color is pale, similar to the shade of boiled. Neither me nor my family likes all this.
  • Therefore, I came up with the best, in my opinion, method of cooking in a pressure cooker in 2 stages: first stew, then fry.
  • This experiment has already been carried out on cabbage "without anything".

  • Today I propose to cook cabbage with pork belly. For cooking, you will need not 2, but 3 stages, since the meat is stewed longer than cabbage.
  • We liked the result very much. The cabbage turned out like fried. The meat is soft and, thanks to pre-frying, is not boiled.
  • I suggest you cook this delicious dish too.
  • Cooking.
  • Stage 1.
  • Pork brisket, cut into pieces.

  • Sprinkle with salt and seasoning. Let it lie down for a while.
  • Then fry on 2 sides in a pan with 1 tbsp. l. vegetable oil.
  • Put the brisket in the pan of the pressure cooker, pour in 3 tbsp. l. water. Close the cover and valve.
  • Cook on the "Quenching" program for 20 minutes at a pressure of 3.
  • After the readiness signal, release the pressure, open the cover.

  • Stage 2.
  • While the brisket is stewing, chop the cabbage into strips (about 1 cm thick). (In the photo, the straw is comparable to the width of the little finger.)

  • Rub it lightly with salt.

  • Place on brisket.(I specially put one piece on top to check if it cooks at the same time with the rest.)

  • Close the cover and valve.
  • Cook on the "Manual" program 11 minutes at a pressure of 2.
  • After the readiness signal, release the pressure. Open the lid.

  • Use the pasta drainer or colander to drain the cabbage. (It can be used for other dishes: cabbage soup, sauces, etc.) Remove the pieces of brisket and set aside for a while.

  • Stage 3.
  • Turn on "Fry" program, pressure - 3, time 15 minutes.
  • Let the remaining water evaporate from the cabbage. Add ketchup for color (optional), sprinkle with suneli hops and salt. Fry, stirring occasionally.
  • If required, add 1-2 tablespoons of vegetable oil. l.
  • Add bay leaves 5 minutes before cooking.
  • As soon as the cabbage gets the desired look, turn off the program. (12 minutes was enough for me for the color and flavor of the fried cabbage.)

  • Add ribs.

  • Remove the bay leaves. Leave the cabbage with ribs covered until served.
  • Serve with ketchup or sour cream.

Note

No matter how hard I tried, the photo still distorts the true color of the resulting cabbage. It is darker. Well, the taste is really like fried.
