Ingredients

Wheat flour (I have 1 grade) 450 g
Fresh pressed yeast 15 g
Salt 2h l.
Sugar 2h l.
Water 150 g
Milk 150 g
Milk for lubrication
Flour for sprinkling

Cooking method

  • Grind yeast with sugar, leave for 10 minutes.
  • Heat water and milk to 37C. Add all the ingredients and knead to a soft and elastic dough. I kneaded in Thermomix, Spikelet mode for 7 minutes.
  • Fold the dough, place in a greased container, cover and leave for 1 hour in a warm place.
  • Then knead the dough, divide into 10 pieces of 77 g each, form a ball from each, cover and leave for 10 minutes.
  • Then roll each ball with a rolling pin into a cake, with a diameter of 9 cm.
  • Place on a baking sheet lined with paper, cover and leave for 30 minutes.
  • Before baking, brush with milk, sprinkle with flour.
  • Bake in an oven preheated to 200C until tender. The exact time depends on your oven, I have 30 minutes.

  • I made 4 out of 10 in the form of pizza. To do this, after 10 minutes of soaking, I molded a cake with sides from the ball, that is, I kneaded it into a cake with my hands and tamped the middle with my fingers:

I made 250 g of premium flour and 200 g of whole grain. I wanted the whole batch, I got 12 pieces of 64 g each, cram into one baking sheet, so they all kissed. Mine began to grab them hot. Until tomorrow, they are unlikely to stay.
