Cakes "Strawberry baskets"

Ingredients

Wheat flour 400 g
Chilled unsalted butter 200 g
Yolk 1 PC.
Sugar
or better powder, if there is
2 tbsp. l.

Cooking method

  • 1. Making shortbread dough (I usually make a large volume, and then freeze it with sausages, then take it out when I want to bake something sweet)
  • Flour in a bowl - add butter cut into small cubes there. (the oil should be cold, but not icy). Lightly rub it into the flour until the mixture looks like fine bread crumbs. Then add about 3 tbsp. l. cold water, yolk, sugar and stir the mixture with a knife until the crumbs stick together. If the dough is dry, add more water. Then we roll it all into a ball on a table sprinkled with flour.
  • You should have a homogeneous, smooth and elastic mass. Do not knead the dough for too long, it will then be rough.
  • Then I divide it into 2-3 sausages, wrap it in plastic wrap, and one sausage in the refrigerator for an hour, and the rest in the freezer "for later"
  • 2. I take out the sausage, cut it into petals with a knife, which I put into molds (I have a special silicone mold for 6 baskets. I connect the petals together directly into the baskets, cut off the excess. In the meantime, beat 1 protein with powdered sugar with a drop of lemon juice into a cool foam.
  • 3. I take out the baskets, chill a little, cover with protein and again in the oven for a minute.
  • 4. I put strawberries in baskets (you can take frozen ones, but all the liquid must be drained) and cover everything with protein and again in the oven for 5 minutes.
  • Then the baskets should cool slightly, take them out of the mold carefully. They turn out to be tastier when cold, but at best 1 piece survives to this stage
