Baklava Turkish

Ingredients

Flour 400 g
Water 400 ml
Oil 250 ml
Sugar 200 g
Walnuts 250 g
Lemon juice (syrup) 1 tsp

Cooking method

  • Dough
  • Unleavened dough (200 ml water + 400 g flour). Proofing in the refrigerator for 30 minutes.
  • Syrup
  • 200 ml water + 200 g sugar + 1 tsp lemon juice
  • Divide the dough into 8 parts, roll out, grease with oil and sprinkle with chopped walnuts (pistachios or almonds can be used)
  • Baklava Turkish
  • (Usually wound on a thin rolling pin, due to the lack of it, fastened 4 sticks for noodles on both sides with rubber bands for money)
  • Squeeze the rolled dough on both sides, like an accordion
  • Baklava Turkish
  • Remove and place in a gastronome container in which to bake. Fill the entire tray, cut the rolls into 3 pieces and grease liberally with oil. Baklava will literally be fried in this oil.
  • Bake for 30-40 minutes at 175 C.
  • Syrup: Bring water, sugar and lemon juice to a boil in a ladle, and stir to simmer for another 8-10 minutes.
  • Baklava Turkish
  • As big bubbles go, remove from heat and pour baklava with hot syrup.
  • Baklava should be infused for 1.5-2 hours and soaked in syrup.
  • Enjoy your tea!

Thanks Malik! I always wanted to do this, but I was too lazy to roll it out with my hands, now I'll try, you just need to clean the nuts.

The recipe is just super you will have to try, but I don't have a dough rolling machine, don't tell me which one you have.
MalikaS
annnushka27, you are welcome. It was the rolling of the dough that always stopped me, laziness

PerseusThanks, I have a Titania Imperia noodle cutter. You can, of course, manually roll it out, but this is the most time-consuming part of the whole baklava cooking process.
sima12
Malikawhat a good recipe, thank you! You give good ideas how to use our coma noodle cutter as for noodles and dumplings, they will try
MalikaS
Simochka, thanks

I try to make the most of my noodle cutter

I'm writing for good luck)) author, do you roll on a dough rolling machine? how in thickness and so on? looking for a dough sheeter for filo, what do you say?
MalikaS
Irene, yes, the dough was rolled out using the Titania noodle cutter. It turns out not very subtle, does not pull up to filo. Now I roll it out by hand, it turns out faster and the dough is thinner.

There are many filo dough recipes and dough rolling technologies on Youtube. You may not need a noodle cutter if you want to buy it only for filo.

I took it to bookmarks, a very interesting recipe. I'll have to try.

Thanks for the answer! no, not only for filo, of course, although baklava is my big weakness, I am ready to eat it every day)) for another dough as well)) and a little for pasta)) I don’t like to roll out the dough by hand, I thought that if the noodle cutter would not be very thin roll, I'll roll ... now in the process of buying, I ordered an electric marcato atlas.

MalikaS
Irishk @, to your health!
Irene, You are welcome! Super, the electric noodle cutter is more convenient to work with.
