Cabbage bread (bread maker)
Category: Yeast bread
Ingredients
Yeast 1 tsp
Flour 440 g
Salt 1 tsp
Sugar (using brown sugar) 1 tbsp l.
Olive oil 1 tbsp l.
Water 260 g
vegetables in the dispenser:
Cabbage approx. 150 g (full dispenser)
Fried onions, finely chopped dill-parsley 1 tsp each.
Cooking method

I made cabbage in a double boiler (if boiled, then it will have to be slightly squeezed out ...) and cut into squares.

I made bread on the timer in the main bread with raisins mode. small to medium size, medium crust.

Note
I wanted to remember my grandmother's cabbage pies, and since breads with vegetable additives are in demand at home, I finally fulfilled a long-ripening desire: I made bread based on cabbage pies.
came home from work, and at home the aroma is magical and the dog is numb with smells

Unfortunately, I didn't take a photo, they started eating right away, but the bread rose for the little one well, I didn't reach the top of the bucket, cm 3-4.
It's crusty with square freckles of toasted cabbage.

try it, I really liked it!
Elenushka
Well, it tastes exactly like pies with cabbage, and the aroma and taste ...

so it is advisable to apply a small brake to this bread so as not to overeat

otherwise I looked yesterday. how my husband diminished 2 pink salmon, and this was after dinner, although he always had a built-in "brake" - he basically overeats VERY rarely ...
Alexandra
And I made gray bread with fried cabbage and green onions - rolled it into 2 rolls and put it in a bread maker

Yelenushka, thanks for the cabbage idea

Elenushka
Health!
and she swayed for a long time, it is difficult to insert a new recipe into my baking schedule, and I only have time to bake on the timer, or in the morning I get the result or it has already cooled down after work (if I put it on the day)
I can't follow the kolobok ... but then I finally got together ...
I also tried the option of cabbage with greens and green onions (dried), it turned out no worse, so the main thing in the recipes is room for change, in the near future I will try the dietary option with replacing a third of the flour with whole grain.

Unfortunately, your option requires participation and peering, maybe sometime on the weekend, if I have time to try.

I absolutely agree, when you come home from work, you don't know what to grab onto: feed / caress your husband, play with your two-year-old son, and put bread on the timer for the night.

Elenushka, all my colleagues conveyed thanks to you for the bread, they said that it smells like cabbage pies
I put it last night, controlled the kneading, and as a nuance, it is better to add fried onions at the beginning of the kneading, otherwise, having mixed with cabbage, he did not want to get into the dough, I had to help with my hands

Thank you, glad you liked it! I myself have already done it several times and really like everyone at home.
The fact is that for the first time I put fried-dry onions (although it's a shame, but it's from a bag), then I tried dried green ones, I would have to try then just chopped onions, it tastes great in bread ...

and yesterday I tried the option diet cabbage bread :

1 tsp yeast
240 gr. flour, premium
200 gr. whole grain flour
1 tsp salt
1 tbsp. l. sugar (using brown sugar)
1 tbsp. l. olive oil
280 gr. water

vegetables in the dispenser:
about 150 gr. (full dispenser) cabbage
1 tsp. dried green onions and finely chopped dill-parsley

if the cabbage and onions are wet, you can reduce the amount of water gram by 10

P.S. and in general, spices can be added to your taste or to the taste of your homemade, any herbs and peppers to taste!
P.S.S. sprinkling of sesame seeds or seeds is also allowed!
P.S.S.S. I often use flaxseed oil instead of olive oil (as a useful one), no changes are felt in bread.

Bon Appetit everyone!
Agnes
Yelenushka, thanks for the delicious bread, this is a godsend!

Out of habit, I added a tablespoon with a heap of bran, and made it on cabbage broth, to which I added 50 ml of milk. The bread is very appetizing, tall, fluffy and aromatic.
Elenushka
but I will take note of the use of the broth, especially in a double boiler, it separates itself and is already ready for use ...

I also want to try adding raw onions to this bread ...
but in general, the recipes are good because there is a base, and the deviations only decorate, here is a spoonful of bran. there is half a teaspoon of pepper ...

Bon appetite, everyone!
Agnes
Oh, right, I added raw onions, a small onion. I don't really like fried in bread, so I threw the finely chopped raw one.

Pepper is great, only children for some reason do not like it ...

It seems to me that you can safely add garlic.
Elenushka
But I still don’t really risk adding garlic, fresh parsley and dill are very good in cabbage, but I don’t see garlic in my bread based on pies if you try to tell me!

Well, let's look, maybe we'll come up with something else!
kipitka
strange. at first the bun was very good. tight. As soon as I added the cabbage, it became normal. and at the end of the batch, the slurry turned out. I poured in more flour, but it was too late. the batch has stopped .. now I sit and wonder. what will come of it all.
Elenushka
Well, actually, I gave flour with a margin, but if the cabbage is wet, then nothing terrible will happen, and if necessary, then you can start the program from the beginning ...

and yesterday I tried the option diet cabbage bread :

11st. l. sugar (using brown sugar)
1 tbsp. l. olive oil

Elenushka,

I would venture to correct it. Diet will really be, if you completely remove sugar (this is understandable) and in a stricter version of the oil too (it is useful, but not with cereals, but with non-starchy vegetables - the principle of separate nutrition). Believe me, this will not make bread worse.

And the rest
Elenushka
Well, it’s not too late to make a decision, or if the flour is on top, then maybe it’s just easier to remove it carefully?

Thank you for the amendments, because all the same I try to get closer to dietary nutrition, and to a separate one, so I try to use at least half of the wholemeal flour, but I occasionally spoil the homemade ones with tasty ones. Removing sugar is a great idea, I just didn't think about it right away ... and it is quite possible to do without butter :-)

Elenushka, go to my Temka about recipes and secrets of healthy eating - there are many bread recipes. And not only

And breads without sugar and salt with coarse flour and bran are surprisingly tasty and beautiful. Especially in the oven. Walt look

Yesterday I baked breads according to this recipe, only part of the flour was replaced with bran. The bread turned out to be delicious, but unfortunately the cabbage is practically not felt, I mean, the taste. Although I did everything according to the recipe. The bread was approved and accepted, but I would still like to taste the very same pies with cabbage. Maybe I did it because I used young cabbage?
Elenushka
I do not think that young cabbage can taste so different, just try to put it a little more, taking into account its moisture content (if you did not dry it in the microwave or oven in advance, increase the amount of flour ... or maybe just take more from young cabbage coarse leaves from the middle of the head and crumble them into bread, but eat soft leaves so it is healthier for health
Tatiana S.
Thanks for the recipe. Hell 2 times already, everyone really liked it. I had young cabbage, I slightly fried it in vegetable oil and then stewed it together with fried onions under a lid in a pan. The first time I added cabbage to HP on a signal, but then I had to pause and stir the cabbage into the bun with my hand, then lightly sprinkle it with flour and continue kneading, otherwise the bun would roll on the cabbage and onion bedding and did not mix with it in any way. The second time, I immediately put the cabbage and onions in the bucket, and everything worked out great. Wonderful bread. And the smell and taste of his cabbage pies. I didn't add greens to the filling, I don't like its taste in pies, but everyone decides for himself according to his taste. Thanks again for the recipe.
