Ingredients

Biscuit:
Eggs 6 pcs.
Flour 150 g
Potato starch 150 g
baking powder 1 tsp
Salt 1 pinch
Sugar 300 g
Cream:
Milk 350 ml
Cream 150 ml
Yolk 4 things.
Sugar 150 g
Corn starch 30 g
Vanilla pod 1 PC.
Salt 1 pinch
Lemon (zest) 1 PC.
Impregnation:
Water 350 ml
Sugar 125 g
Liquor 100 ml
Strawberry glaze:
Strawberry 500 g
Powdered sugar 250 g
Gelatin 30 g
Cream 2 tbsp. l.
Lemon juice 1 tsp

Cooking method

  • Biscuit:
  • Add a pinch of salt to the eggs and beat with sugar. Add sifted flour with starch and baking powder. Bake for 30 minutes at 180C.
  • The recipe says that the author didn't really want to separate the eggs into whites and yolks, so he took and beat everything together. I split the eggs, beat separately the yolks with 2/3 of the sugar, then beat the whites with the remaining sugar and put them in portions into the yolks. Sifted flour with starch and baking powder and added to the egg mixture.

  • Cream:
  • Boil milk and cream with 100 g of sugar, vanilla and lemon zest. In a separate bowl, beat the egg yolks with the remaining sugar, then add the starch and add a little warm milk, stirring all the time. Pour the mixture into the remaining milk and cook, stirring quickly with a whisk, until the cream thickens (about 1 minute). Cool and refrigerate.
  • Instead of a vanilla pod, I took sugar with natural vanilla.

  • Boil sugar and water syrup (5 minutes), chill. Add liquor.
  • Strawberry frosting:
  • Soak gelatin according to the instructions on the package. Mix the strawberries and sugar, transfer to a saucepan and bring to a boil for 3 minutes. Add lemon juice and cook for 30 seconds. Remove from heat, add gelatin, add cream, cool and refrigerate.
  • I took frozen strawberries - 2 bags of 300 gr.

  • Assembly:
  • Cut the biscuit into three cakes. Collect the cake by soaking each cake and spreading cream over it. Top with strawberry icing and garnish with whole strawberries.
  • I cut the biscuit into 2 cakes. Another point, not specified in the recipe, but clearly visible in the photo of the cake on the blog - strawberries are laid out on the cakes along with the cream. I didn't have a lot of fresh strawberries, so I put some strawberry icing on the cream with a teaspoon. In the summer I'll try it with real strawberries.

  • The cake is easy to prepare and delicious, I liked the combination of custard and strawberry. The cake is soft and tender, it literally melts in your mouth. In general, I will bake some more!

Note

I saw this cake in some show about culinary travel. I was intrigued as the Italian pastry chef explained that this cake is served during wine tasting. And not for tea, as we have. I didn't have time to write down the recipe, so I went to Google. To my surprise, Google did not give out any cakes to the request for Cake "Cardinal's Hat". I managed to find it only through a translator in one Italian blog. 🔗
The cake is shaped like a round red cap worn by the cardinal.
