Traditional veal liver pate

Ingredients

calf liver 1 kg
smoked brisket 700 g
carrot 700 g
onion 500 g
butter 100 + 200 gr
basil, tarragon, salt, pepper taste

Cooking method

  • We prepare this pate for the holidays: for Christmas and Easter (or when the soul asks). I searched the forum, but I did not find a similar one. So I'm happy to share.
  • Finely chop the brisket and melt in a saucepan with a thick bottom or a cauldron (I make it in an Uzbek cauldron for pilaf). When the fat is melted, I add coarsely chopped carrots and onions there, salt, pepper, add spices (I use Provencal herbs).
  • Simmer for 10 minutes. Add coarsely chopped liver, simmer until tender.
  • Grind everything on a blender or food processor (I like the grains to feel, but that's a matter of taste). Transfer back to a saucepan, add a piece of butter (one hundred grams) and bring to a boil.
  • Arrange in molds, cool and put in the refrigerator.
  • If you need to store for a long time (and there is a lot of pate), then you need to melt 200 grams of butter (approximately), add the same herbs that were added to the pate and pour in the chilled pate so that the butter "seals" it tightly. And then put it in the refrigerator. All

You can, after it is ready and already in a state of pate, add an egg or two to it, mix well, fold into a mold and bake. This is often done here, very tasty. I just love toast more)
