Cheese soup with cauliflower and mushrooms

Ingredients

Processed cheese 2 pcs.
Cauliflower 1 small head of cabbage
Frozen mushrooms 100 g
Small vermicelli 2 tbsp. l.
Onion 1 PC.
Carrot 1 PC.
Butter 2 tbsp. l.

Cooking method

  • Put the unfrozen mushrooms in a hot dry frying pan, heat well and evaporate the liquid. Bring the water in a saucepan to a boil and pour cauliflower disassembled into inflorescences and cheese grated on a coarse grater. Fry the onion in butter until golden brown, add the grated carrots, mushrooms and simmer a little. Add vermicelli, onions with carrots and mushrooms to a saucepan, salt, add seasonings and bring to a boil.
  • Bon Appetit!

30 minutes.

Note

You can take any mushrooms. The cheese I have is "Friendship", I tried it with others, I liked it less. You can take cabbage frozen in a bag, then throw it into boiling water without defrosting it, and add cheese when the water boils again.

I do not fry anything in soups and do not stew. Therefore, I threw carrots, onions and mushrooms into the water. Cooked for half an hour. Then I added frozen cabbage (I wanted color in this soup, so half cauliflower and broccoli). I cooked for another 10 minutes. I added noodles and cheese (there were grated remnants of all kinds of cheeses in the freezer, and they went). She turned it off and left it on the stove to rise. Black is not flies. This is dried purple basil.
The soup turned out to be cloudy (I think from cheese). But so delicious!
Cheese + champignons + basil (there is still a bit of dry parsley and lovage) give a stunning aroma and taste. And the cabbage adds fresh crunchiness.
