I have Tefal .. but about the multicooker - I don’t know .. but it seems to me that it’s possible .. because this roll can be made in a mantle dish ..
Kosha
In our family, such a roll is loved from minced lamb + beef. So that there is always fresh parsley in the minced meat, and even better parsley + cilantro. Not three minced potatoes, but finely-finely cut into cubes. And if there is also an opportunity to make minced meat as for manti, that is, chop finely with a knife or in a meat grinder, but with a special attachment (so that the minced meat is coarsely ground), then you get a large, juicy "Manta" (from the word "manti") , which the mouth rejoices greatly.
The smell when this roll is made is wonderful !!!
With soy sauce or with tomato sauce "Satsibeli" in a bite with a salad of fresh cucumbers and tomatoes they eat so that they burst behind the ears!

it turns out a big, juicy "Manta", which the mouth is very happy with.

Kosha that's for sure .. my family calls him "Big manta" ..
but your advice - to chop meat and potatoes - I will take note and next time I will try it .. and put some weed ... thanks!
Cake
The first 25 years (or as in the theme "Bedtime Story" - in a past life) I lived in Uzbekistan. Both manti and dumplings "chuchvarA" (fried, that means deep-fried), and khanum were made constantly both on weekdays and on holidays. Indeed, the classic khanum (well, or at least the same as I ate in most Uzbek families) is made from mutton or beef (or a mixture), necessarily chopped, and not rolled. This also applies to mantas - meat is ONLY cut. A completely different taste! They put a lot of onions - it turns out more juicy. Necessarily a little cabbage, it is then almost imperceptible, but for some reason they must put it. The following ratio is very popular on weekday dinner:
diced potatoes, small onions, bacon. Served with tomato sauce.

Now about my personal experience. Beef is full forever, now only pork. artoshka + onion + fresh salts with a layer of thin meat (pork belly) - perfect! Very satisfying - men gorge themselves for a long time. Above certainly with mayonnaise, where without it ...
On holidays - no potatoes and more meat. Although completely without fat - rather dry.
I love khanum for the high speed of cooking. Dumplings-dumplings must be sculpted for a long time, there is no time for this. And then he rolled out a pancake 40 centimeters in diameter, laid out the filling and EVERYTHING !! Cook longer than manti, of course, I cook for at least an hour (I steam, more precisely, in an ordinary manti). I make 6 rolls at once, I freeze half in case of sudden guests or a lack of desire to cook. In the microwave, it is heated elementary and becomes as soon as freshly brewed (damn it, steamed)
Juju, well done, that I taught everyone !! A worthwhile dish, inexpensive, quick and DELICIOUS !!!
I'll go defrost the meat

As far as I have information, cabbage is chopped specifically to preserve the juice in the product. Although my mother never put cabbage in manti, but they were very juicy. She also lived in Tashkent for a long time in her past life.

As I understand it, there are 5 rolls? And how much water is 1 glass in ml.? And how "tough" the dough should be? My HP may not be able to handle it. Even if you need handles, we will knead. It looks very appetizing!

Viki
- water - glass 250 ml.
-the dough turns out not cool .. elastic, rolls well .. on manti it turns out steeper .. so do not worry -HP will cope
-yes, I divided the dough into 5 parts .. but I made only 3 rolls .. no more is included in the steamer (they must be laid so that they do not touch each other, otherwise they will stick together) .... I just froze the remaining dough ..
And according to the number of minced meat - it's as you like .... you can put less .. but I like the filling to feel and the dough is thinner .. so I put all the minced meat on 3 rolls ..
Juju
Viki good luck to you!!!
And I have an idea to slightly change the minced meat - I will add mushrooms .. tomorrow I will do it with the remaining dough .. I don’t know if it will be tasty as with meat .. but in any case I’ll experiment ..

My oven coped with the dough!

Viki .. well done!! you cook in two baskets at once !!!! and I, frankly, did not even think about it .. I have 3 baskets in a double boiler .. then I cooked chicken in one, and khanum in the other .. but I forgot the third .. I rarely use it .. Thanks for a hint !!!!
We look forward to continuing !!!
Viki
Done !!! Very tasty! The dough is soft. Only I did 4 rolls, it's hard for me with fractions ... The gingerbread man is evenly divided by 4, 6, and 8 ...

Wonderful "big manti" turned out!
I recommend to everyone. It's a pleasure to do. Firstly, quickly, and secondly, simply. And to say "tasty" is to say nothing!
Thank you Juju !!!
Juju
Viki
How wonderful and beautiful you have done !!!
I'm glad you liked it ..
If you don't mind, I can recommend something else for a double boiler and just as simple and tasty
Viki
WANT! I don't cook often in a double boiler ... You know, when I see something so interesting, I like that monkey and I want this too, and so that it is just as tasty and pretty! Do you think it was easy to photograph Khanum when people armed with forks came running to the smell ?! I cooked manti, but not often, the dough was cooler and it took a long time to mess around. And the rolls are simple and just as tasty. Now I will often do it. And on the side dish, if you paid attention, a Chinese mixture of vegetables with mushrooms and bamboo sprouts. It turned out great!

it was the same ...
I cooked manti, but not often, the dough was cooler and it took a long time to mess around. And the rolls are simple and just as tasty.
Exactly..manti - this business is too laborious ..
... And on the side dish, if you paid attention, a Chinese mixture of vegetables with mushrooms and bamboo sprouts. It turned out great!
yes-ah .. I drew attention to the side dish .. so all .. well, how would each vegetable by itself .. it turned out great !!! .... and black mushrooms? I mean Chinese? I really like these !!!

Viki and other recipes with photos I will gradually spread ... okay?
Viki
Yes, in the Chinese mixture "Bonduelle" it is black mushrooms, they are also called woody ones. But I also add this to the mixture:
Khanum - steamed rolls with vegetable gravy
it turns out delicious. And be sure to use soy sauce instead of salt.

Girls, thanks for the wishes, now, it feels better, and here, and here ...Viki I even wanted to portray this even more, I even have a noodle cutter (although, as I understand, you can handle it manually here?) Moreover, my husband has already bought food, when he saw THIS and Lasagne, he immediately rushed to the market and did not even grumble that for a noodle cutter half of Kiev in all directions traveled until found
Old lady
Thanks for the recipe! Just had dinner - very tasty!
FLENKA DONETSK
Today I did it too, yummy !!!
zvezda
I once did that, but did not think to make such a delicious side dish !!! Thanks for the tip!
Ukka
But I made rosettes based on khanum - "gul-khanum", made rice cookers in a steam basket, I was too lazy to get a separate double boiler ...
"Gul-khanum" is a roll of "khanum" cut into 5 cm pieces and pinned on one side.

alyona
ukka , appetizing. I want to have dinner again.
Is there pork inside?
Ukka
alyona, inside is a prefabricated minced pork + beef + chicken, I like this And in the original, of course, lamb (you have to ask Pakat ...) + onion ...
Ernimel
I decided to try to do it. But the filling turned out to be completely "wrong" in every sense. Simple minced pork with onions, garlic and salt. And from the grass in the refrigerator there was only dill ... and I also poured it in a little ... CHEESE ... we love him very much in everything. It turned out already some kind of lazy steamed lasagne ... How it tastes - we'll find out soon.

The dough came out tender, I liked the touch, but I had to add a couple of tablespoons of flour (although maybe this is my subjective and it would be so normal). It skated perfectly, stretched softly and did not break at all. I lubricated the bottom well, I hope it won't stick. Later I will report more on the results.
Ernimel
I am reporting.

Everything was wonderfully cooked and even came off (although my husband, in a fit of passion, pulled him too sharply out of the basket and the barrel was scratched). According to the law of the most terrible meanness for dinner, I was finally overcome by a cold, and I had to evaluate the taste almost "by touch." But if we take the spouse as an indicator, then it turned out superbly - he (in the original not very hungry), with praise and obvious pleasure, reduced half of the roll. I ate with sour cream, and my husband - with a "Carpathian" snack (onion-carrot-pepper-tomato).

This, of course, was the "wrong khanum", but for the very idea and recipe for the dough - many thanks !! And I will experiment with fillings. When you want something like "dough-meat" in my oven, this is a super option. Especially considering the heat to come. There is less heat from a double boiler than from an oven. Yes, and you don't need to quality it for half an hour.

Or maybe someone has already tried interesting combinations of "wrong" fillings? Maybe they even made sweets?

There is a demand for freezing and defrosting this dough. At the exit, I came out with 2 rolls from about half a portion of the dough. And I put the second in the freezer. Then you can get it out and just let it thaw on the table? Will it be nominal?
nut
I bought myself a Bork steamer and I want to try it tomorrow, make Khanum and I have a question - on which grate should you put rolls and set the time for 40 minutes?
Margit
In our family, hunon is eaten with a 50/50 sauce of sour cream and kefir. Add salt and finely grated garlic to taste. The sauce must be infused for at least a couple of hours in the refrigerator, or even better, prepare it in advance and put it in the refrigerator overnight. Delicious!
agata116
I don't have a steamer, but I really liked the recipe, please tell me on what mode should this dish be made in the cartoon?
Teen_tinka
So you have agata116, you have a steam basket in your multicooker ... why not use it? No difference
agata116
I thought about the basket, but maybe it is not high enough and also, there probably only 2 things can be put, so I thought, what if someone just made them in the cartoon on some of the programs?
Elenka
I have been looking at this khanum for a long time, the steamer is only in MV. I think that 3-4 pieces will fit, the rest I will steam on gas and colander.
I liked Yucca's version very much, but here you need a real steam cooker with a large working surface.
How can I miss a double boiler.
I will definitely buy!

theoretically it can be combined with cooking / stewing something. For example, soup (if liquid does not reach the basket). In general, any mode where evaporation is going on will work. I, for example, "steamed" eggs for sorrel, so that two in one at once.

Well, and the dimensions - see for yourself, it is not necessary to twist them large, you can make several small ones.
agata116
Thank you, everyone very much for the advice that I will come up with something, the dish is very interesting, and most importantly, we have never tried this, thanks again.
simfira
Interestingly, and this dough can be made and put in the refrigerator?
natamaslova
I can't live without a double boiler, I cook eggs only in it for 16 minutes. and 6 pieces are ready, I cook all the vegetables only in it, and in general I think that each device should perform one of its functions and the cartoon should cook and stew soups and cereals
Csscandle
Thanks for the recipe, delicious!
But my dough is bubbling after cooking, what could be the matter? Made strictly according to the recipe.
