Carrot cake

Ingredients

Biscuit:
Sugar 1 tbsp.
Flour 1 tbsp.
Eggs 3 pcs.
Baking powder 1 tsp
Raisins 0.5 tbsp.
Carrot 0.5 tbsp.
Cream:
Sour cream 25% 200 g
Sugar 100 g
------------------------------------------- ------------
Baking dish Ø = 22-24 cm
Glass = 250 ml

Cooking method

  • Biscuit:
  • 1. Grate carrots on a fine grater. If the carrots are juicy, then squeeze out the juice quite a bit, if there is not enough juice, then we do without squeezing.
  • 2. Beat the eggs with sugar until the mass increases and whitens (at least 7 minutes).
  • 3. Add carrots, raisins (if you add) and sifted flour mixed with baking powder to the egg mixture. Gently mix the mass with a spoon or spatula. The consistency of the dough is the same as for a biscuit.
  • 4. Preheat the oven to 180 degrees, put the dough in a mold and bake for 30 minutes. We check the readiness with a splinter or a toothpick.
  • 5. After baking, take out and cool in a mold.
  • Cream:
  • The cream in this version of the cake was sour cream with sugar. The taste is excellent. The cream saturates the carrot biscuit, but it is not completely absorbed and a small layer of cream remains.

Note

The photo shows a cutout without adding raisins. It turns out very tasty with raisins, I also tried adding nuts - I liked it.
The cake is very easy and quick to prepare (and eat). Recommend.

I didn't do it in a slow cooker, I won't say. But it's cooked like a regular biscuit. Both in time and in temperature, so try to set it in time as for a regular biscuit.

I added raisins, nuts, vanilla, grated carrots on a fine grater - no one even realized that there was a cake from a carrot :))) And put a little less flour - a very fluffy cake turned out, airy, it was even difficult to cut. Then I dried croutons from the remnants - they crumbled in the mouth

Armed with another kind of biscuit! Thank you! A great option for kids. I made a cake for tea strictly according to the recipe and cupcakes, but the filling is already different - lingonberries grated with sugar and sour cream-custard. I liked the second option more to my taste.
