Ingredients

Black currant (frozen) 115 gr.
Sugar 150 gr.
Water 25 ml
Cream 25% 480 gr.
Egg yolk 4 things.

Cooking method

  • Currants (without defrosting) with 25 gr. sugar and 25 ml of water, heat until sugar dissolves. Do not boil!
  • Cook for 5 minutes, stirring occasionally.
  • (I practically did not crush the berries, I decided to leave them whole.)

  • Yolks and 125 gr. beat sugar into lush cream.

  • Heat the cream to 70 * C and whisk, pour the cream into the mixture of yolks and sugar in a thin stream.
  • Pour the mixture back into the saucepan and cook until thickened (7-10 minutes). Leave to cool for a while.

  • Combine the cooled mixture of cream with yolks with black currant, mix. Pour the mixture into an ice cream bucket with a spatula in place.

Note

The initial temperature of the mixture = + 35 * C.
After 27 minutes, the temperature dropped to zero.
