Whole grain persimmon bread

Ingredients

whole grain flour 1 3/4 ms
persimmon puree 1 PC
brown sugar 1 1/4 ms
melt butter 1/2 ms
eggs are small 2 pcs
light raisins 1/2 ms
cranberry 1/2 ms
walnuts or pecans 1 ms
salt 1/2 tsp
baking powder 2 tsp
cinnamon 1/2 tsp
nutmeg 1/2 tsp
cognac 1/3 ms

Cooking method

  • In a small bowl, combine fruit and cognac and set aside.
  • In a large bowl, whisk together flour, salt, baking soda, cinnamon, nutmeg, and sugar.
  • Pour melted butter, eggs, persimmon puree, cognac-fruit mixture, and chopped nuts into the flour mixture. Mix well.
  • Pour the dough into a greased pan.
  • Bake in an oven preheated to 180 degrees for one hour.
  • Cool on a wire rack.

  • I also baked this bread from premium wheat flour without raisins and with white sugar.

Note

The measure can be any: cups, glasses, etc. I used a multitask as a measure.
Part of the persimmon was chopped with a blender to puree, part was cut into large pieces.
Bread is kept at room temperature for a week, for longer storage can be frozen.
