Ingredients

Turkey thigh 1 kg
Chicken breast 2 pcs
Chicken hams 1 PC
Ground black pepper (to taste) 1 tsp
Pepper Rose 1 tsp
Pepper mix 1 tbsp
Spices (Provencal herbs) 2 tsp
Ground ginger 1 tsp
Salt 20 g
Bay leaf large 2 pcs
Gelatin 10 g
Dried sweet pepper 2 tbsp
Water 500 ml
Garlic 3 cloves

Cooking method

  • 1. Prepare the meat (1586 gr). Place the meat in a container and mix with spices (Ground black pepper (to taste) + Rose Pepper + Pepper mixture + Ground ginger + Spices (Provencal herbs) + Salt + Bay leaf (break, but not finely)). Close with a vacuum (you can use a film) and put in the refrigerator overnight. (I had 12 hours).
  • 2. Remove the prepared meat from the refrigerator. Remove the bay leaf. Make an assorted minced meat from a piece of meat (659 gr). At the same time, cut the skin from the ham not coarsely and grind some of the chicken fat that was on the ham (147 g). Cut the rest of the meat into small pieces. Mix everything.

  • 3. Add bell pepper + gelatin to the meat. Break the pepper beforehand, but not into crumbs, so that there are pieces but not large ones.

  • 4. Place the baking bag in Belobok (tie the bottom) and place the meat. Tamp lightly while tightening the bag. Tie the top and put on the lid with springs.

  • 5. Pour water into Shtebu and place Beloboku. Set the program Meat 17 min / pressure 70. After the end of the program wait for the valve to open - 30 min.

  • 6. Carefully remove Beloboku from the MV and let it cool without opening it. Then put in the refrigerator until it cools completely. It took me 12 hours. (cooled off on the balcony). After cooling, the Ham settled by 1 cm.

Did you like it? As dry as boiled pork ?! For me, it's a little dry, like boiled pork, boiled chicken breast. Of course, I'm not a specialist in all the intricacies of ham cooking, but it seems to me that the moisture in cooking ham consisted in the fact that the main meat was not dry in itself, there was fat on it, especially on chicken thighs, and the gelatin retained a moist structure when it cooled down !! !
