Chocolate Chocolate Pie (Steba DD1)

Ingredients

Eggs 6pcs
Dark chocolate (50% minimum) 250gr
Butter 130gr
Sugar 150gr
Flour 50 g
Salt Pinch
Glaze
Dark chocolate 100 g
Water 30 g
Sugar 50 g
Butter 20 g

Cooking method

  • I advise everyone to cook this pie. It is similar to our Soviet Prague, but more tender.
  • From the beginning we prepare the cake itself.
  • Separate the whites from the yolks.
  • Beat the whites with a pinch of salt until a cool foam.
  • Break the dark chocolate into pieces and grind it in a blender or chopper.
  • In a water bath, melt the chocolate with butter, the desired temperature is 40 g.
  • Transfer to the mixer bowl and add sugar and yolks, mix everything until smooth.
  • Add flour and mix.
  • Take a bowl of proteins and gently stir in the chocolate mass. I did it in Kenwood at 1 speed.
  • Lubricate the teflon bowl with butter and pour out the dough.
  • We close the lid and turn on the Porridge mode, pressure 0.3 for 1 hour 10 minutes.
  • After the end of the mode, we are waiting for the temperature to drop to 95 and open the lid. The cake is very tender and moist, so it is very tasty with it.
  • Chocolate Chocolate Pie (Steba DD1)
  • While the cake is baking, make the icing.
  • Break the chocolate bar into pieces and grind it with a blender or chopper.
  • We transfer to a saucepan, add water and sugar and cook for 15 minutes per 100 grams, do not forget to stir. No need to cover with a lid !!!!
  • After 15 minutes, add butter and mix with a mixer until smooth.
  • We put our pie on a plate and pour it with icing, carefully distributing it !!!

Baked in a cartoon without pressure. Two hours later, the pie turned out, the guests were already sitting and there was no time for photographs. Krivenky, on the one hand, rose more than on the other, probably because of my constant lid openings and mode restarts. But!! Tasty! not so tall therefore more dense, everyone liked it. Shtebik was dismantled, cleaned, it seems to work. It can be seen that some sensor is clogged. This is my first experience with baking. Also buy a new blender))).
