Turkey ham (Steba DD1 Eco)

Ingredients

Turkey pulp 1.5KG
Garlic, salt, pepper taste

Cooking method

  • Cut the turkey pulp into small pieces. Add chopped garlic (I took 4 large cloves), freshly ground pepper and about 30 grams of salt, mix, fold into a new plastic bag. Place this bag in a vacuum bag, pump out the air. This is what the future ham looks like at this stage.
  • Turkey ham (Steba DD1 Eco)
  • Leave in the refrigerator for several hours, I had it for almost a day. Then open the vacuum bag, take out the bag of meat and carefully put it into the ham maker together with the bag (I have Beloboka, recently appeared, which I am very glad about).

  • Pull with springs, put on a barrel in a steel bowl Shteba, pour water 1-2 multi-glasses, Meat mode, pressure 0.3, 30 minutes, 10 minutes after the end of cooking, drain off the remaining steam, take out the ham, put it vertically on a plate, cool (at I stood on the balcony until morning). Then, without disassembling, put it in the refrigerator for several hours.
  • Then disassemble the ham, take out the bag of ham, cut into thin slices.
  • The result is an insanely tasty, dense, non-crumbling ham!

Natalia, in a bag in a bag for two reasons: the first is a reusable vacuum, then there is less washing, the second is taken out of the vacuum and immediately into the ham maker, no need to transfer!
And the meat - there is the pulp of the thigh and the breast, in equal proportions, we sell it this way, called turkey stew.
Do it, the ham turned out to be beyond praise! The spoiled husband appreciated it in full, although he does not particularly like turkey.

Larissa, no, she's not really compressed in a vacuum bag, it's just better impregnated with seasonings. I just took pieces of meat, without minced meat, agar, it was pressed well in the ham maker itself, where its springs are pulled together on both sides and gradually pressed, about 1.5 centimeters "dried out" somewhere in the process of cooking and cooling. The result is a very tight, heavy cylinder:

Dense, but not dry at all! I cut it quite thinly, it does not fall apart, but if you try to roll it into a tube, it will not stand up, because after all, there is little connective tissue in it, mostly pure meat.

I report that everything suits my taste, but such a structure did not work out for you. When cutting, the extreme pieces fall apart. though all the juice remained in the bag, nothing leaked out into the pan.
