Sauerkraut cabbage soup with dried mushrooms (Steba DD1 ECO)

Ingredients

Sauerkraut (the sour the better) 500 g
Bulb onions 1 piece
Carrot 1 piece
Potatoes 3-4 pieces
Dried mushrooms 2 handfuls
Salt, black peppercorns, bay leaf taste
Vegetable oil 2-3 tablespoons

Cooking method

  • 1. Soak dried mushrooms in cold water for 4 hours (I usually soak overnight).
  • 2. Peel and finely chop the onions, peel the carrots and grate them on a coarse grater.
  • 3. Turn on Shtebik, stainless steel bowl, Roasting mode for 5 minutes. After the signal, pour oil into the bowl and put onions and carrots. Stir fry.
  • 4. Remove the mushrooms from the water, if large, then cut. Peel the potatoes and leave whole.
  • 5. After Stebik's signal about the end of the mode, add mushrooms, cabbage and whole potatoes to the bowl. Pour in cold water (you can use the water in which the mushrooms were soaked, the taste will be more intense, but the broth will be darker), until the soup is as thick as you like. Add peppercorns, bay leaf, salt. Soup mode 5 minutes. After that, we transfer to the Simmering mode for 3.5-4 hours.
  • 6. At the end of the mode, take out the potatoes, mash them in mashed potatoes and return to the bowl. You can use it with pleasure.
  • Note: 1. You can pour boiling water, then immediately set the Simmering mode. I have given up on this recently. I think the soups are less tasty. And all of them are meat, fish and vegetarian.
  • 2. You can cut the potatoes in the way you are used to. Simply in such cabbage soup the next day the potatoes become tough, and by kneading them in mashed potatoes you get a good structure of broth without "wooden" potatoes.
  • 3. You can cook such cabbage soup with both fresh and frozen mushrooms. For my taste with dried ones - the most aromatic.
  • The languor mode is one of my favorites in Štebik. I also cooked fresh cabbage soup. It tastes like an oven.
