Wheat bread with figs and walnuts (in the oven)

Ingredients

Chatterbox:
Water 315 g
Wheat flour 150 g
Dry instant yeast 5 g
Honey 1h l.
Dough:
Chatterbox all
Natural yoghurt 70 g
Wheat flour 225 g
Whole grain wheat flour 100 g
Amaranth flour 50 g
Salt 9 g
Walnuts 50 g
Dried figs 70 g

Cooking method

  • For a chatterbox, heat the water and honey to 47C, add flour, yeast, beat until smooth. Cover and leave for 20 minutes.
  • Fry the nuts in a dry frying pan, after cooling, grind them between your palms, remove the husks, and crush them coarsely.
  • Cut the figs into small pieces.
  • For the dough, add all the ingredients, except for salt and nuts, to the mash. Knead at low speed for 2 minutes. Cover and leave for 20 minutes.
  • Then knead at maximum speed for 8 minutes.
  • Add salt and knead until smooth at maximum speed for 6 minutes.
  • Add nuts, figs, knead at low speed until evenly distributed over the dough.
  • Fold the dough with an envelope, grease with oil on all sides, put in a greased container, cover and leave at 28C for 1 hour, then put in the refrigerator for 2 hours.
  • Then knead the dough. It is recommended to form 2 loaves, but I did 1.
  • Place in a proofing basket, seam up, cover and proof for 90 minutes at 28C.
  • Preheat the oven with a cast iron pan to 240C. Transfer the loaf to a saucepan, make cuts, sprinkle with water, cover and bake for 20 minutes.
  • Then remove the lid, reduce the temperature to 220C and bake until tender. The exact time depends on your oven. I have 30 minutes.
  • Can be steam baked.
