Pickled mussels

Ingredients

Boiled-frozen mussels 0.5KG
Drinking water 1 glass
Vinegar 9% 1-2 tbsp. l.
Sugar 1 tbsp. l.
Salt 1 tsp
Pepper, laurel taste
Lemon taste
Sunflower oil 2 tbsp. l.

Cooking method

I'll write how I make pickled mussels. I really like this snack and you don't always buy a delicious already pickled product in the store, but here we adjust the taste ourselves and don't add anything bad to the marinade.

Defrost the mussels, rinse and pour over with boiling water. Fold in a tray or jar in which we marinate.
Making the marinade. Dissolve salt, sugar in boiled water, pour in vinegar. We put pepper (I like peas more), bay leaf. We carefully taste the marinade and adjust the taste if something is missing. By the way, with sugar without fanaticism - excess sweetness is out of place here.
Fill the mussels with hot marinade. Add vegetable oil. We send our mussels to cool-ripen. You can eat them pretty soon, since initially we use boiled mussels, which we just saturate with taste.
If you like lemon, I recommend adding a couple of circles to the jar. Then you can pour less vinegar.

Note

For lovers of seafood, I recommend this easy way to marinate mussels. Surprise guests and pamper yourself

Mussel meat has a pleasant fishy taste and smell.
Mussels are sold live in shells, boiled-frozen in briquetted form or in the form of canned food.
Mussels in shells are processed as follows: small shells adhering to them are cleaned from the shells with a knife, kept in cold water for several hours, and then washed well in running water; then the mussels are poured with fresh cold water and boiled for 15-20 minutes. The boiled meat is separated from the shell, rinsed in warm boiled water.
The resulting mussel meat is fried with fat until the smell of dampness disappears.
The broth obtained after boiling the mussels is filtered and used for making soups and sauces.
Boiled-frozen mussels are thawed in cold water or in the air, then they are carefully examined and washed.
To prepare soups, mussels are poured with cold water, brought to a boil, salt, roots (carrots, parsley, celery), onions are added and continue to cook at low boil for 7-10 minutes. Mussels for appetizers and main courses are simmered in a container with a closed lid in a little water or milk with the addition of onions, allspice and bay leaves for 15-20 minutes.

I also pickle mussels "by eye". (y) I love them in the morning for a sandwich with butter. And it turns out much cheaper than ready-to-buy ones.

Thanks for the recipe.

Irinka, THANK YOU! A very interesting way of eating mussels I didn't think to cook something like that, but it's simple
Vitalinka
Irisha, thanks for such a simple recipe! I will definitely cook it, I love mussels!
irza
Girls, how glad I am that we dropped by the seafood (Chef ). I hope you enjoy it and the recipe is useful. I'm waiting with impressions
Scarlett
Irish, how beautiful it looks !!!!! I somehow bought loose weighed ones, tried to pickle them, but they turned out to be some kind of crumbled after defrosting - so threw away did not try. Do you buy any particular company? And is it possible to try a sea cocktail like that ??

Thank you, Tanyush !
Initially I bought mussels in the market, the price is lower than in the store, but the size (especially after defrosting) is certainly not so hot. But I ate it anyway, because I like this dish. And now I buy in large supermarkets, also by weight, but the size pleases more, and the quality is better (and I select the ones I like).
I haven't tried this recipe with a cocktail, I'm buying it for julienne. But I think that it is possible (are all the ingredients boiled there?)
irza
Oh, so they praised, but no one dared to cook and share their impressions ... And I have already included mussels in the NG menu.

No, well, what do you run into at once? Mine already in a vacuum container lie quietly and do not buzz
irza
Tanya, no, I will not run over. I'll stop by, I think I'll try everything besides mussels)
Scarlett

Oh how! Well you come in, if sho

And then! I've been going to visit my hometown for a long time!

Thanks for the recipe!
Scarlett
Oh, I didn't even report on these holidays. I did it on NG - we went to my father-in-law. I laid it out in butrik - I still remained, wondering whether to put one more thing on each canapesh, recklessly gave one mussel to the nephew to try - and a mustache, after a couple of minutes - an empty jar Husband ate the rest of the house in a couple of minutes even without bread! Now I will do it for Christmas - I have already taken it out of the freezer. Immensely grateful for the recipe

Irina, everyone in our family loves seafood, including mussels. I prepared it for the New Year's table, the recipe is very quick, simple and I liked it. Everyone liked the mussels marinated according to your recipe. Thank you. I will cook more than once.
irza
Tanya, you brought such goodies! The stomach is seething and drooling! I take on board your ideas. Mercy!

I remembered what I wanted to say. Once I added a couple of crushed garlic cloves to the marinade. It turned out spicy and aromatic.
Scarlett
Irina, with these moves, everything was gone - and our talks about booters. Re-write, what do you think? I wrote to you in a personal message, but it did not survive - well, here's a real move - with a lot of losses!
irza
Yes, your sweets were not preserved with the technical work. BUT I managed to throw it off on my computer.
Tan, I can throw it off in a personal, and you will issue a post on your own behalf.
Scarlett
Lets do it! (from modesty, I, apparently, will never die)
Kirks
Girls share the secrets of the mussel sandwich, otherwise I pickled a whole kilogram of mussels. Thanks for the recipe, now I won't buy ready-made pickled ones anymore: rose: it's tasty and cheaper.Pickled mussels
Scarlett
Irina, Even I'm dull in the morning. Why are you going to send me my post? Just insert it yourself - and that's it! There girls want toast too!

Ideas Butrikov from Tanya-Scarlett:

Quote: Scarlett

I take croutons (purchased ones - which are like croutons, I know that it is harmful, but I really love them), slightly grated with a clove of garlic, top with mayonnaise, then mussel and a piece of fresh cucumber, sprinkle with finely chopped herbs, you can rub an egg. I do the same with sprats or good canned food - I just add pickled onions and tomatoes (if any) - they look so elegant on the table, and, despite the simplicity, fly away from the table. Another option is to grate with garlic, smear with mayonnaise, a little sprat pate on top (only it has become expensive recently, it rarely comes across tasty), then sprat and cucumbers-tomatoes-greens For the ceremonial option - spread butter toast, then spread half of it with pate, and on the second, put the sprat and sprinkle with green onions, cut into diamonds - that is.cut the feathers obliquely or squeeze out the pate with a pastry bag, and take a quail egg and gently fry it like fried eggs (my friend made butriks with caviar and such an egg - the guests were in culture shock). In general, options are possible! When a nephew sees that I'm going to cook butriks, he already squeaks (and constantly quietly scribbles before sitting down at the table - I leave a couple of them on his plate for such a case)
Well, it’s good that I reminded you - I’m just composing the menu for Easter
Py. Sy. Maybe ask a question in the topic "Looking for a recipe" about such croutons?
Kirks
Irina, thank you Tanya. She herself would not have thought of such sweets
Scarlett
irza, and you insert here a link to your croutons? Maybe some of the girls will add themselves with a piggy bank!
Py. Sy. I defrosted another bag of mussels and boiled two squid for testing. Now I'm getting ready to cook the marinade in the kitchen. I want to surprise everyone with new booths for May!
Svetta
Scarlett, Tanya, can you marinate squids like that? And then I have 2 squid hanging out in the freezer, neither here nor there ...
Scarlett
Svetik, I have no idea - just in a fit of hamster (the words "discount" and "price of the week" magically affect me) I bought two pieces - and now I decided to try - the mussels are delicious, suddenly the squids too?
Svetta
Scarlett, I'm waiting for impressions ...
Karsei
I wonder if octopuses can be pickled in this way? Nobody tried it?
Scarlett
Marish, try it and sign off later. I've stuffed two squid in the marinade along with mussels - I'll report back after the holidays. Although, to be honest, I used to eat only shrimp from seafood - everything else. But Irishka's branded mussels, I really liked it, maybe I will eat squids. By the way, on our forum there is a recipe for pickled squids from Masha - ShuMakher, the girls praised it - just put it in the search engine, otherwise I can't insert links
Karsei
I'll have to try to do it. Do you need to cook them? I have never cooked them and therefore I do not know how to handle them. My eldest son loves pickled octopus, I want to pamper him.
Scarlett
Karsei, mussels are sold boiled and frozen, I boiled the squids myself - 1 minute after boiling. At the expense of octopuses - if they are raw, then it is imperative to cook, but how - I don't know, maybe, like squid - into boiling water, boil and cook for 1 minute?
Svetta
So, today I bought some mussels and made a half-recipe. They stood for an hour and took a sample. I liked it very much! Thanks for the recipe!
By the way, Scarlett-Tanya, how are the squids turned out? I wait...
Scarlett
Oh, she reminded me, and I warmed up in the refrigerator - very tasty! This time I added garlic. Tomorrow guests will appreciate
Karsei
So I finally made mussels and seafood cocktail. Everything turned out great. My son really liked it, and a special thank you from him. What I can do without you, girls, I now live on the Bread Maker. There are so many tasty things here and I want to cook all this, and most importantly, I'm not afraid to try, I know that you will always come to the rescue.
Scarlett
irza, listen, the guests from our mussels were just in ecstasy! All in one voice the recipe asked
irza
Oh, tease me! I know that I want to make it tasty, but I can't buy good mussels. All small and rotten ((.
p. from. Tan, did you dry the crackers?
Scarlett
Irish, I was going to, but literally at the last moment a part-time job appeared - I had to get by with the purchased ones, but I WILL MAKE them MANDATORY !!!!!

Ir, I take it from ATB, but it is almost always available, and in Silpo it is much more expensive
iiriha
Girls, please tell me how many days you can store pickled mussels?
Tashenka
Irina, thank you! Finally I was honored to cook. I bought very good mussels: large, even, one to one.
It turned out very tasty. And the pungency is the way I like it (or rather, how my stomach tolerates). I will definitely not buy in the store now.
Now I'm thinking of trying a seafood cocktail to marinate ...
Again
Vitalinka
Irisha, catch a huge salvation!
On the weekend I marinated mussels according to your recipe, such a delicious treat! And what I was going to try for so long. Now I will do this all the time.
nakapustina
I also decided to use this recipe. The family eats seafood squid and shrimp. I didn't find any mussels, I bought a frozen cocktail. Cooked according to the recipe. Do you need to peel the mussels? Somehow they don't look appetizing, tails like dill umbrellas stick out Prompt, pliz By the way. after cooking from 500 grams, probably 200 grams remained

Natochka, so in the recipe you do not need to cook mussels:

Defrost mussels, rinse and pour boiling water over.

Irishenka, thank you very much for the recipe, I will definitely cook it for my friends !!!
