Cooking method

  • Not so long ago, I found out about the existence of a shchanitsa (puppy) and fired up first to make this shchanitsa, and then this legendary cabbage soup.

  • Schanitsa (puppies, shchinitsa, as well as sour, crumbly) - sauerkraut, finely chopped top leaves of cabbage, retaining a dark green color. It is prepared according to the same recipe as sauerkraut. It is used as the main ingredient for cooking cabbage soup. Cabbage soup made from shchanitsa is usually called "gray cabbage soup" or "green". They require a lot of simmering and differ significantly in taste from those prepared from ordinary sauerkraut.

  • I decided to cook slowly, in order to maximize the very taste that connoisseurs write about.
  • Cut the potatoes into cubes, chop the onion finely, put everything in a slow bowl, add the shrill, mushrooms and fill everything with water (I have boiling water).
  • I put it to languish for at least 6 hours, the cabbage soup stood for 8-9 hours.
  • It's sooo delicious, I didn't even expect it. The taste is completely different, not like the cabbage soup from ordinary sauerkraut.
  • Of course, everyone writes that this cabbage soup is cooked with pork and preferably not lean, but ... I can't eat meat, and I couldn't help but try this cabbage soup, so I have a lean version.

Yesterday I cooked cabbage soup from ordinary sauerkraut. Weighed down for a very long time. Delivered at 9pm, turned off at 2pm for the next day. 1 hour at high, 2 hours at low.
