Italian wedding soup

Ingredients

Strong chicken broth 2 l.
Paste (small balls) 150 gr.
Spinach (originally curly endive salad) 150 gr.
Meatballs:
minced meat 500 gr.
Parmesan grated 50 gr.
Egg 1 PC.
Bread crumbs
Garlic 1 clove
Onion (small onion) grate 1 PC.
Salt pepper.
Croutons (when serving.

Cooking method

  • Traditional soup. Although there are variations, of course. Well, like we have with borscht.))))
  • Meatballs should be many, about the size of a pretty penny. Italians say that the size of these meatballs is a matter of special pride. Probably the same size as our hand-made dumplings.)))
  • The owner of this recipe, a wonderful cook from Canada, Regina, allowed me to replace the "curly endive" with spinach. My deepest bows to her, for this wonderful soup.
  • When the broth is ready, throw the meatballs there, add the spinach and cook for 5-8 minutes. Add the pasta at your discretion in time (different pasta is cooked in different ways (time I mean.) If you want the broth to remain transparent, you can boil it separately, rinse and add at the very end.
  • Croutons (croutons), according to the rules, must be prepared separately.

  • 6 eggs
  • 6 tbsp. l. flour
  • 6 tbsp. l. dry crumbs Parmesan
  • 2-3 st. l. parsley
  • 1/2 tsp baking powder
  • Beat everything, pour into a pan. Bake 170C for 20 minutes. (or while they dry)
  • Cut into squares right in the baking sheet.
  • But I followed the path of least resistance (tea is not in Italy :)) and just dried the crouton from yesterday's ciabatta.
  • In general, if you cook the broth in advance and wind the meatballs, making the soup will take you a very short time. And delicious! Believe me, it's incredibly delicious!
