Cabbage charlotte (Steba DD1)

Ingredients

Fresh white cabbage 300-350 g
Kefir 250 ml
Eggs 2 pcs
Flour 200-250 g
Salt pepper taste
Baking powder 1 sachet
Sugar 1 tbsp. l.
Butter 50-60 g

Cooking method

  • Finely chop the cabbage.
  • Kefir (I had aged homemade yogurt), eggs, melted butter, salt, mix the pepper (I added about 100 g of mayonnaise, lay there, there was nowhere to put it), add flour and baking powder, mix. The dough is a little thinner than pancakes.
  • Add cabbage to the dough, mix, you can pour the dough over the cabbage, but I prefer it mixed with the dough.
  • On frying, she warmed up a saucepan, threw in a piece of butter. Turned off the frying. I laid out the dough with cabbage, leveled it, set the Porridge mode, pressure 0.3, 1 hour 20 minutes, without a valve at all.
  • As I squeaked, I took out the pie from the saucepan, turned it over, I wanted to fry the top, but I didn't like the look of the toasted top, so it became the bottom again)))
  • P.S. It is better to fry the cabbage so that it gives off excess moisture, the pie will be flatter and drier!

Cooking program:

Roasting, Porridge

Note

I always baked it on a fairly large baking sheet, it turned out to be low, with a fried top and bottom, I liked that result much more, in the Cube the charlotte turned out to be damp for my taste. And I threw it from the saucepan onto the plate, and back)))
I think if you reduce the amount of food a little, it will be better. Such things come out better when they are not trying to make them high, I just did it according to my old recipe, I almost did not change anything.

ElenkaM
Well, that's another matter! And it's boring to hamster alone! I will definitely do it. I love baked goods with cabbage!
taty327
Helen, bakes to your health! Just read the note. Make it smaller, it will be more interesting and drier.
ElenkaM
Thank you, Svetik. I will consider.
I also have a delicious cabbage pie. I will do it on occasion. In a little Cuckoo it turned out well,
I think Stebik will not let you down.
Larssevsk
Svetochka, this is a fine fellow !!! I, like many of your recipes, the first time I found out about such a pie, but I immediately wanted to. Thank you very much from me and from all the "dummies" of the forum. At home there are 4 heads of cabbage from the dacha, I finally found a use for them, since we do not really like stewed cabbage
taty327
Girls! The idea came to me, and Tanya-Admin supported me! Fry the cabbage beforehand so that the excess moisture is gone, it will be much better. I used to bake it low, and it was not relevant, but an excess of moisture was felt in the Cube!
taty327
I will do it next time with fried and change the recipe (if the result is completely satisfactory).

Yes, we must try, the Cube is not worse, we are waiting!
Tanyulya
Svetik, what I know deliciously, I do that. But it's also beautiful
ElenkaM
Right, Tanyush. The crust of the pie is a lovely sight!
Stafa
Thanks for the recipe. I made half the recipe and baked in AF for exactly 13 minutes. Pre-fried cabbage with onions.

I didn’t reduce anything, I didn’t fry cabbage. It's still very tasty!

And it's also delicious how to make pies for pies, stew cabbage beforehand, add boiled eggs, if you do the filling in the middle, do not stir. We love so much.
I recently made a similar casserole with fish (from canned food), it was also delicious, so I also added kefir, mayonnaise to the dough, and even sour cream was lying around. And I added a boiled egg and dill to the fish. But I'm still cooking everything in the oven, I'm still in the throes of choosing a fast food, so I'm not here to advise you, I just wrote my modest considerations.

Eh, and I just looked - everything is there, but the baking powder came out. Sveta, and if I have it with soda, how much is it? And in general - will it work?
taty327
Of course, it will turn out, add 1/2 teaspoon, it will quench itself with kefir.
Robin bobin
I put everything in it, put it in the oven. Crusts are my weakness. 40 minutes is enough for her?
Masinen
I, too, will think of such a cake tomorrow) I love cabbage pies))

Aha, and I love! Mash, are you going to fry the cabbage? I will fry it next time, and I will take it one and a half times more, it will dry out after frying :)

And don't say, crusts are my weakness too! I sometimes sprinkled it with cheese in the oven, when it was not too lazy to rub
Masinen
I will extinguish it and boil the eggs there) I want it like cabbage pie)

Aha! It will be great! Good luck and bon appetit! And yesterday I took two pieces for the night :)))
Robin bobin
Sveta, it turned out deliciously. I also sprinkled it with cheese))). And I added all there cumin, pepper. Only she was wet inside, I thought at first, not baked. But probably it was cabbage that gave moisture? I didn't fry. Now I will try with roasting and at Shtebe.

Well, yes, Lena, yesterday I was buzzing everyone's ears about what is better to fry! Roasting will take away excess moisture, it will be tastier. I made it thin in the oven, it was not wet, just right, but yesterday's one seemed too wet to me, but oh well, it’s a big trouble, but together we’ll adapt to cook in Stebe.

Cook, Lenochka, to your health! Thanks for your interest in the recipe
Just read all the comments and fry the cabbage, winter cabbage, it is very juicy now, and the pie turns out to be moist. Fry until moisture evaporates in butter, cool and put in the dough. You can replace kefir with sour cream, and sometimes I also replace some of the sour cream with mayonnaise, the dough loves it, it becomes more magnificent

Yes, it turned out not very wet, but I'll also try with fried cabbage - for comparison. I make it in the oven with raw cabbage - there this cake turns out to be thinner and in general there is no moisture at all, but I want to learn how to make it in a cartoon.
taty327
Yes, and I used to do it only in the oven, it was just right.
Pten4ik
Baked! Thanks for the recipe!
Cabbage charlotte (Steba DD1)

Made in the form of a pie, that is, dough-filling-dough, pre-fried cabbage and added three boiled eggs. When I took it out, I managed to break it in half
Now prepare the broth and we will try
taty327
Beauty, what can you say!
Larssevsk
Girls, and I am reporting. Everything worked out . Only you have beautiful ones, but my ugly one came out

Cabbage charlotte (Steba DD1)
taty327
Larissa, why are you ugly? Just not that crispy, that's all. How does it taste? Fried cabbage?
Larssevsk
Yes, Svetochka, I have fried the cabbage. It tastes fine, but I'll bring it to mind next time. Firstly, I will add spices to the cabbage, and secondly, mayonnaise is really asked for in the dough (for our taste). And so it was necessary to anoint the top with mayonnaise, because it turned out rather bland. But this was the first try. The main thing is that it was baked and did not fall apart. Thanks again for the recipe
taty327
To your health!
Masinen
Svetochka, thanks for the recipe !!
So I got to Charlotte)

Amazing, Mashun! So I would have stolen a kusmanchik, from mine I got a little bit, my whole husband and the youngest were credited
Mash, if it's not difficult, write how you baked, I really like your cutter!
Masinen
The light did everything as you wrote. I just put in the sour cream.
Reduced baking time by 10 minutes, those 1.10)
And mixed the dough with cabbage. Fried cabbage with onions)
It seems that's all.
ElenkaM
Well, my hands have reached the cabbage charlotte. Thank you, Svetik! It turned out very tasty!
I did it according to the recipe, but instead of kefir I took half and half sour cream and mayonnaise. I did not fry cabbage,
and finely chopped, added salt and squeezed well before loading into the dough. I put it to bake and
After about an hour, I put my nose in a saucepan and .... the pie fell off, but it was high-eyed! Well, nothing tastes like
reflected.
THANKS again, Svetik!

Kefir or sour cream dough?
Tumanchik
Girls, I'm confused .. how much liquid (sour cream or kefir or mayonnaise or mixtures thereof) 250 g or 250 + 100?
Tricia
What a cool recipe!
We respect any cabbage, and if you add fried bacon to the charlotte, the husband will be happy.
And if you replace kefir with milk and add a little citric acid to react with a baking powder, do you think it will work?
Ingredients 250 kefir, but the author added a couple more spoons of mayonnaise. It seems to me that they do not need to be written into liquid, rather they will go as extra. oil.

I report:
Made a charlotte - very tasty!
Fried cabbage, added salt, ground black pepper, nutmeg and ten. a spoonful of sweet mustard. I also fried 150 gr of bacon. I divided the bacon into 2 parts: the first part to the bottom, the second from the top - to the dough with cabbage. When baking, awesome smells of cabbage, bacon, mustard and baked goods were carried around the house. Very inviting!
Husband under the beer immediately grunted half of the pie.

Irina, I answer your question, however, September is already coming to an end, but oh well, better late than never, I rarely come here very much.
You have already answered correctly, 250 ml of kefir and a little mayonnaise, vary to your taste. Good luck to you!
taty327
Anastasia, I'm glad that I liked the recipe! I myself haven’t cooked it for six months, I have forgotten a bit, now I’ll do it with your corrections, thanks!

I carry my plus sign and thank you for the recipe !!! Very timely, on the occasion I bought a bag of cabbage, for salting and of course I love cabbage pies :-) :-) :-) and first of all I will try your recipe, thank you for such a charlotte recipe :-) :-)

Girls, and no one tried to do it in an ordinary multicooker? or just add a little time ...
Fantik
taty327, an interesting recipe! I will definitely do it. I got acquainted with both the basic and all the experiments. ))))) I liked the addition about roasting cabbage, about large pieces from Masinen and about bacon from Tricia... Thank you girls!
