Beans with zucchini and tomatoes

Ingredients

beans 2 st
zucchini (or eggplant) 2 pcs (4 pcs)
onion 1
carrot 1
medium sized tomatoes 4-5 pcs
vegetable oil
italian herbs, salt, pepper

Cooking method

  • Soak the beans overnight. Boil until tender in the morning. Drain the water. If the beans are of normal medium size, then until half cooked. How do I check? I take a bean in a spoon and blow on it. If the skin comes off, then it's ready.
  • In a multicooker saucepan on rast. oil, fry the chopped onions and carrots until golden brown.
  • Honor the courgettes, cut into cubes. Add to fry - fry.
  • Skin the tomatoes. To do this, I cut them with a "cross" on top, pour boiling water and immediately dip them into cold water. Cut the tomatoes into large pieces. Add to zucchini. We also add beans to tomatoes. Salt, pepper and Italian herbs to taste.
  • Extinguishing mode 20 min.
  • I had huge beans.
  • You can take eggplant instead of zucchini. It will turn out to be no less tasty.
