Ingredients

wheat flour 150g
water 80g
fresh yeast 2g

malt 7g
salt 13g
fresh yeast 12g

Cooking method

  • Poolish
  • Dissolve yeast in water, add flour. Knead the dough. Leave at room temperature for 4 hours. Then transfer to the refrigerator for 12-15 hours.
  • Dough
  • The next day, dissolve the yeast in water. Add malt, rollish, flour. Knead in a food processor, adding lard flakes. When the lard has dispersed add salt. Knead until the dough is smooth.
  • Let the dough rest for 5 minutes. Then put on the table and divide into pieces of 80 g each.
  • Form a sparrow bun from each bite. To do this, make a cake from each piece and roll up a tourniquet from it, about 25 cm long, with thinning in one direction. Collapse into a sparrow knot.
  • Let the buns stand at room temperature for 15 minutes. Then refrigerate for 45 minutes.
  • After the refrigerator, dip each bun in a baking soda solution **, cut the beak and tail, sprinkle with salt.
  • Bake in an oven preheated to 220C for 15-20 minutes.
