Green tomato salad with cabbage

Ingredients

green tomatoes 3 Kg
Sweet pepper 1 kg
White cabbage 2 Kg
red tomatoes 1 kg
carrot 1.5KG
bulb onions 1 kg
vinegar 9% 1 glass (250g)
granulated sugar 1 glass
vegetable oil 750 g
salt 3 tbsp. l.

Cooking method

  • Cut green tomatoes, sweet peppers and cabbage, add salt and put in a cool place for 6 hours.
  • After 6 hours, add chopped red tomatoes, onions, carrots, vinegar, sugar, vegetable oil, stir and over low heat after boiling for 45 minutes.
  • At the end, roll up in jars. If there is a lot of brine, distribute evenly over the jars - it is very tasty.
  • Green tomato salad with cabbage

10-11 liters (14pcs 800g cans)

I have had this recipe for 25 years already - my aunt and mother used to love to make different salads, but some were unsuccessful, some more or less. And this recipe survived in my notebook as the most worthy of all tried. I haven't done it for a long time, but last year I came across it - my husband was at first skeptical about the amount of salad and its filling. And having tasted it - now this salad is his favorite.

And yet - the taste of the salad appears in a month, carrots with a crust and the whole bouquet of the lettuce.

I took off the last tomatoes on September 25, 8 buckets. Some of the tomatoes began to hurt. I started looking for a recipe with green tomatoes and found it on my favorite bread maker. And the cracked cabbage went into the salad. Already made this salad. It turned out 17 cans. (0.5 and 0.7 l) 18 jar was incomplete and decided to eat it. Everyone liked the salad. And the carrots were cut on a waffle grater, again either halving along the carrot, or into quarters. I quickly cut the pepper with my hands, and the cabbage on a knifeless insert. Finely probably not worth shredding.

I cooked it in two approaches in the Steba pressure cooker, it turned out great, so much juice! I put it first for 15 minutes on the Vegetables mode, pressure 0.7. Then she didn’t forcibly bleed it right away, waited until the pressure dropped by itself. I decided to put the second run for 5 minutes, it's also normal, everything had time to stew and the juice was good to give.
