Wheat-rye bread with tomatoes (oven)

Ingredients

Wheat flour 300 g
Rye flour 50 g
Sugar 1 tsp
Dry yeast 1 tsp
Whey (buttermilk) 200 ml
Salt 1 tsp
Olive oil 2 tbsp. l.
Hard cheese (parmesan) 60 g
Dried tomatoes (cut) 3 tsp
Basil and rosemary (to taste) 1-2 tsp
Tomato paste 1 tbsp. l.

Cooking method

    • Mix the tomatoes with olive oil and leave to steep.
    • Heat the whey, add flour, sugar, yeast. Knead the dough (about three minutes in a food processor). Usually, I select about 2 tbsp from the total. l. flour and add it gradually, if necessary. Cover and leave for 20 minutes.

    • Round and place in a greased container. Cover and proof in a warm place for 1.5 hours (until doubled).
    • Knead the dough, form a loaf and place in a proofing basket, seam up. Cover and leave in a warm place for 1 hour.
    • Preheat the oven to 230 * С together with the stone.
    • Turn the dough piece onto a baking sheet, make cuts and place in the oven on a hot stone. I have a small oven, so for steam I just spray it inside several times from a spray bottle.
    • After 10 minutes, reduce the temperature to 180 * C and bring to readiness (30-40 minutes).
    • Cool on a wire rack.
  • The bread is delicious and aromatic. As for my taste, you can have less herbs (I drunk 1 tsp, that is, only 2 tsp), but my son liked it - I diminished half a loaf at a time.
