Zucchini pancakes with mint sauce

Ingredients

zucchini 1 PC
Parmesan ~ 50 g
breadcrumbs ~ 60 g
eggs 1 PC
finely chopped green onions
parsley
salt, pepper, garlic to taste
sauce
chopped mint leaves handful
plain yogurt 1 pc (125 gr)

Cooking method

  • Despite the fact that the site already has recipes for making zucchini pancakes, I decided to place another one, since it is slightly different in composition. Correct me if this is not the case.
  • Grate the young zucchini together with the skin on a coarse grater. Add a lightly beaten egg, grated cheese, bread crumbs, chopped green onions and parsley, salt and pepper. Garlic can be added to make the pancakes spicier.
  • Mix everything. Add oil to a preheated frying pan or to a MV, put about 2 tablespoons with a heap of zucchini (the mixture turns out to be thick and falls apart easily, just pour it into the pan, like ordinary pancakes, will not work) and gently smooth. Bake for 3-4 minutes on each side, until golden brown. Turn very carefully with a spatula.
  • Serve with mint sauce: mix the chopped mint with yogurt.
  • Maybe someone will like this option.

You don't need to add flour. Breadcrumbs instead. The mixture turns out to be thick, not quite like pancakes, you can even make cutlets from it. It is necessary to turn over very carefully, they can fall apart. But when they cool down a little, they keep their shape.

Marina, you can put cheese to your liking, but you don't need a lot of bread crumbs, just for a bunch of zucchini. I like that there is no flour in the recipe, and zucchini does not give much liquid with bread crumbs, as with flour and crackers you practically don't feel.
