Probably the bread was cut while still warm, so the top crumpled.It is best to cut completely cooled bread, then there will be no problems. The top is always thinner than the sides. You can see this in the photo of bread in a cut. The sides that touch the shape of the bread maker when baking are thicker than the open top. Probably, in order to cut bread without problems, you can advise you to buy a special bread knife (with wavy teeth) or an electric slicer.

In x / p "Panasonic" the "Basic" mode includes temperature equalization from 30 minutes to 1 hour. The total time is 4 hours. There is probably no such alignment in your printmaker, so the time is less. So you can use the "Basic" mode in your x / n to bake this bread.

The bread cannot always be the same. Much depends on the composition of the flour and other ingredients in the dough. A lot affects the crust and structure of bread and crumb. Observe the process and remember for yourself what you put into the dough and what you get.

If bread suits you according to its taste, why should you "find fault" with it.

You can also bake in plain sunflower oil, and sprinkle sesame seeds on top just before baking (on a beaten egg).

Changed nothing in the recipe, except for the amount of sesame oil. Instead of 2, I put 1.5 tbsp. spoons.
The gingerbread man was soft, softer than the usual white one I have, but did not stay on the walls. And since I measured everything on the scales, I decided not to add anything more.
The dough did not rise until baking. The gingerbread man is evenly smeared and slightly "swollen" on the left
I was already beginning to get upset about what a pancake would turn out, but then baking began and the dough jerked up so that it broke the roof
I don’t know what it tastes like, I’m not allowed fresh bread now. I walk like a "cat around sour cream", it looks delicious, it smells good, and I’ll find out the rest only tomorrow.

I was confused by the amount of liquid in the recipe - it seems to me that you can give 20-30 ml less. In this regard, the gingerbread man was on the verge - just a little bit more and would follow the bucket with a comma. but for the sake of the purity of the experiment, I decided not to add flour. before baking, the dough spread all over the bucket and only came up a little. anointed with kefir, sprinkled with sesame seeds. I looked almost before the end - the bread rose almost to the very lid, even the kilogram loaves did not rise like this, the roof in the middle tore, but the taste did not get any worse from this wonderful fragrant loaf
Next time I'll take less liquid - I'll look at the result.
